Fabulous meal using quality ingredients, an inventive menu, outstanding staff and service. We have eaten at many Michelin* restaurants over the years, but this is one of the best! We particularly liked that we were seated at a table with a good view of the kitchen, so were able to watch our meal being prepared and plated. Each course was then brought to the table by either Ben Wilkinson, or one of the team who explained what everything was. Each course on the tasting menu was very different so the totality of the meal was well balanced. The flavours within every plate were complex, sometimes surprising, but always a delight. We loved the way the flavours in a single mouthful changed as it was chewed and swallowed. Staff achieved the perfect balance of efficiency and friendliness. The wine flight was on the expensive side, but we are not big drinkers so shared one between us - which the sommelier was happy to accommodate. My biggest regret is that this restaurant is not closer to where we live. Thank you to everyone who helped create and serve this meal - you are a credit to your profession and well deserving of your accolades.

This is our first trip to the Pass however I don't see it being our last! This is a small intimate restaurant with an open kitchen so you can watch the artists at work, because that’s what they are! Turning each plate into a masterpiece of culinary delight. There are numerous lovely touches from the crew at The Pass which lead to an amazing experience, from the chefs delivering the food to the table and explaining a little about the plate, to the waiting staff being attentive and chatty but not too much a perfect balance. If you like tasting menus with wine pairings there isn’t a better place to go in the region, great food, wine and service lead to an awesome evening that I look forward to repeating again in the near future.

This is the 3rd time we been to this restaurant. And 3rd time lucky. This is the best. The previous two visits had been both disappointing. The savoury dishes are definitely the highlights. It's also nice to have the chef serving the dishes to your table. The restaurant is very small so it does get rather noisy. And you do notice the service get slower as the restaurant get busier. The service is tentative. I think they can make the cheese course fully optional. The deserts are very underwhelming and the petit fours definitely need a lot more work. Overall tho, still the best so far. Although compare to the restaurant over the road. I think the other is better.

It has been 5 years since I was last fortunate to eat in the Pass and it has only improved in that time! Ben clearly knows food and the menu we experienced was sublime. What makes the experience even better is the ability to watch what's going on in the kitchen and just how calm and collected the team are as they produce perfection. Words won't do the food justice so I will post pictures instead!

Dinner at The Pass by Ben Wilkinson It is located in South Lodge, one of the finest country house hotels in Sussex. The kitchen is run by Ben and his partner Monika Zurawska, who leads the front of house team. The Pass is a small space, with a large glass wall that stands between the restaurant and the kitchen. An intimate restaurant, offering a unique dining experience for up to 28 diners. You sit at the high-topped tables to watch Ben and his young team prepare and then proudly serve a seven course tasting menu. The meal starts with a complimentary glass of fizz and a selection of tasty snacks. The first course is a scallop dish with hokkaido squash, espelette pepper,coppa ham-almond. The next course was a show stopper of a Celeriac dish like no other we have ever encountered. Royale - beef cheek-hen of the woods - truffle with a beef fillet-smoked emulsion tartlet on the side. As well as a glass of broth with fresh bread and cultured butter. The rest of the courses arrive in quick succession, delivered by chefs who explain each component. Day Boat Turbot,leeks- squid- dulse - white asparagus, Ridgeview sparkling. Venison,roast loin - liver dumpling - bitter leaves hazelnut-artichoke-redwine. A course of 3 cheeses. Desserts were Rhubarb,ewe's milk curd - rose- yoghurt. Chocolate Délice,caramel- hazelnut-raisin. Just when you thought it was all over, there was a selection of Petit Fours with a sorbet on the side. There's not many hotels that can boast three award winning restaurants, of which this is their flagship. That has just retained its Michelin Star. The food was faultless with staff, charming,and professional.

Absolutely perfect and extremely special experience! The food was faultless. The staff were really amazing. Just the right level of chatty and friendly, professional and personable but not “in your face” or pretentious. Every single course was presented and executed with finesse and precision. It was so tasty! And the sommelier was really helpful too. My wines were fabulous. We will never forget this fantastic evening. Well done to absolutely everyone in the team. They all played a part in “the show” and the star turns were all the flavours and textures… it was extra special to get Ben Wilkinson himself presenting and explaining a couple of the courses.

This was our third visit and each time has been a visual and flavour delight. There have been slight changes in courses each visit to take into account sessional produce. Ben and his team produce exceptional flavour combinations all the way through the meal from start to finish. The front of house team led by Monika are very welcoming. They now have four drinks flights on offer and this time we went for the Discovery Flight which gave pairings we would not have thought of, all explained by very knowledgeable Leo, which were excellent. Although the tables & seating are normally high to give you a view into the kitchen given enough notice they have brought in a lower table to accommodate a family member in a wheelchair. We are looking forward to our next visit.

Outstanding food , spoilt by adjacent kitchen scrubbing their floors in full view of The Pass restaurant which was in full service !! I spoke to a member of staff how just shrugged their shoulders . Not the ambiance you’d expect. Shame as the food and service was amazing, but please don’t scrub floors while serving is in full swing .

Our 2nd visit to the Pass did not disappoint. Last time we had a superb tasting menu before a star was awarded. Now with high expectations and 1 star confirmed we are pleased to say the food has improved. Every dish from canapés to Petty four full of flavor. And this time not wanting to drink alcohol we tried the soft drinks pairing and this was a revelation of brilliant drinks design matching the food perfectly. As much skill went into the drink design as the food. We highly recommend this as a combination. We will be back.

This is the second time we have eaten in The Pass. The whole meal, without exception, was fabulous. Every dish consisted of interesting food combinations created by Ben and his team, made even more special by the ‘personal touch’ of Ben explaining each course as it was served. Although this is a fine dining restaurant, the atmosphere is relaxed the staff are delightful. The sommelier, Monica, is so knowledgeable and very willing to shore that knowledge.

Terrific restaurant with views into the kitchen. The seats and tables are high but we called in advance and a lower table was sorted as my wife uses a wheelchair. Perfect location right by the kitchen entrance. Tasting menu only, seven courses, with the option of wine pairing or, as I had, the zero alcohol pairings which were all developed by the restaurant and matched the food extremely well. The experience lasted just over three hours, as noted in the information when we booked, making the pace just about right. Chef Ben Wilkinson was very knowledgeable and served just about all of the courses, giving excellent information about the ingredients and cooking methods. His partner Monika was an excellent front of house manager who was very knowledgeable about the zero alcohol pairings. Every morsel of food was eaten (including an oyster which my wife normally leaves) and thoroughly enjoyed. Exceeded our very high expectations.

Ben Wilkinson at The Pass is a must visit if you are looking for an exceptional Michelin star dining experience. Whilst refreshingly unpretentious, the team here struck a perfect balance of formal/informal fine dining. The open kitchen concept enabling us to view the talented team of chefs preparing and then serving direct to our table was impressive - detailed explanations of each course of the tasting menu and the ability to ask questions was great; huge thanks to Head Chef Ben and his team Timmy, Jordan and Tom. Every course was delicious and beautifully presented (my photos don’t do justice!). We opted for the wine flight, perfectly paired. Thank you to Leonard for your insightful explanations of the wine choices and recommendations. Finally the front of house team were the thread that pulled together such a perfect evening. Thank you to Monika, Laura and Woody for looking after us so well - your timings were spot on and your engaging approach was refreshing. We will be back for sure!

We liked this restaurant. Very different to Latimer at Pennyhill park in that it isn’t quite so intimate. The Pass is very open, bright lighting and you’re close to your dining neighbour. The seating is high up dining. You can view the kitchen through its glass walls. The food was outstanding as you’d expect.

Absolutely incredible menu, perfectly paced and balanced. Lovely touch of having the kitchen staff serve and the domain the menu. All the serving / hosting staff we interacted with were lovely, friendly and knowledgeable. A small bungee if covers but the intimacy adds to the experience, watching two separate kitchens in full flight. Hugely recommended.

I've been wanting to go here for a long time, and finally made it this weekend. The space is quite small, with full views over the kitchen of The Pass and Camellia for 1/2 the table...not much to look at if you don't have a view of the kitchen. The first couple of courses were delicious, and then we hit the beef course with a super rich sauce...In my opinion this should have been served later in the menu, as it was so rich. The fish and lamb courses that followed were delicious, but we were unable to eat them all as the richness of the beef course had filled us up. The cheese course was barely touched, and we were given the chocolates to take away as we couldn't eat them. I appreciate that everyone is different and some people can eat more than others, but this was not for us. We've eaten a few times at the nearby Heritage, and have really enjoyed the experience and prefer it to The Pass. Good service by all; I liked the chefs coming out and describing the dishes, although I had forgotten most of the ingredients by the time they had finished each description. One last comment - for a 5 star hotel, the ladies toilets were more 3 star (the ones down the stairs by the bar).

Although my friend and I have stayed at South Lodge on numerous times, we have never eaten at The Pass as we were always ‘waiting for that special occasion’. That occasion was my friend’s birthday. The ambience is so relaxing with views into the open kitchen. The food was on another level - I can see why Ben has been awarded a Michelin Star. It is full of flavour, exciting, interesting - there aren’t enough superlatives to describe it! As each dish was served to our table, the flavours and components were explained by either Ben or one of his team. We had the accompanying wine flight, served by Monica, who was very informative and knowledgeable. All the team were very welcoming and made the experience even more special. We will definitely be be back. I wish Ben, Monica and their team every success.

I give the 8 course tasting menu we had at south lodge with Ben and his team 5 stars for delivering a steady stream of delicious courses with excellent wines at the perfect pace for a great evening. We have eaten at 1,2 and 3 star Michelin establishments that did not deliver the flavor that Ben produced in each dish. Mouthfuls that kept on delivering flavor combinations that lasted and lasted and were memorable. We will be back. And I hope he gets the stars he deserves soon

We have visited The Pass a few times over the years, but this was a first experience of Ben Wilkinson’s dishes. It’s safe to say it won’t be our last! Exceptional food from Ben and team, paired with a superb, warm and friendly service led by Monika. The current tasting menu is delicious and one of the most enjoyable I’ve ever had anywhere. As well as the fabulous flavours, perfectly judged portions and number of courses (8 plus snacks), the textures really set this apart and blew my taste buds! The Chalk Stream Trout course and Lemon Thyme desert were particularly standout. My personal favourite was the “Celeriac” course, which combined with the bread and beef tartare was both the perfect comfort food on a dark, cold evening outdoors, exceptionally tasty and satisfying! My wife particularly loved the ‘snacks’. Also refreshing was to have a cheese course that isn’t an optional extra. Service was superb, warm and chatty from arrival and throughout. It had the right balance of attentiveness all evening. Having the head chef himself present his masterpieces is always a nice, welcome touch as well in my book. After some short term residency chefs at The Pass over recent years, Ben and Monika have moved down from the Lake District earlier this year to take on The Pass permanently. Welcome to the South and it’s great to have a permanent Chef in place again with star quality. We highly recommend a visit for that special occasion or treat. The Pass is back to its very best and long may it continue, back in great hands.

Firstly, I believe Ben moved to The Pass after the vast majority of these reviews. Something to be aware of. I only know this from researching local restaurants when looking for a perfect meal for my partners 40th and we found it! The whole experience was excellent. The food sensational, blew our socks off and the wine pairing perfect, ( which we would highly recommend). All of the dishes were delicious, our favourite was the lemon desert but very difficult to decide. The team made the experience for us, their humble enthusiasm for and love of the food shone through, such a delightful team from the bottom to the top. Excellent personal, professional and seamless service. We had a very special evening, thank you. Only criticism, we found the lighting a touch bright on the back wall. Thanks Ben, Monica and the whole team.

I attended the restaurant for dinner with my best friend. From start to finish I could not fault a single thing. The food, the service and the pairing wine! The head chef and wait staff were excellent. Perfect for a special occasion! The thoughtfulness and utilisation of fresh ingredients grown and reared on-site at the hotel is what makes this a stand out meal experience.

A great experience. The staff were exceptional, so interesting to have the Chef, including Ben serving. The sommelier was exceptional, also helped us get into a local vineyard! Great setting, delicious food, but the pace of service was painful. Courses took between 30 and 45 mins to come out (the menu is a set 7 courses with tasting starters) so after 2.5 hours we were only just half way through. As a result of the huge waits between courses the menu lost its way. It was unclear on the evening we dined whether there was a staff shortage (it was not clear who was in charge, the maitre d was also the sommelier) but to charge £95 per head plus service (more than tasting menus in top London restaurants with Michelin stars), this is just not good enough. The food standard is as high in the adjacent restaurant, Camilla, and a much better experience.

Not the best taster menu I’ve had , I was actually doubting if this restaurant has a Michelin star! The service was good not as good as I would expect at a Michelin star restaurant but good, the food was very average we had a taster menu, the black Angus was so tough I had to really carve it to cut it, the trout was nice but not astounding as you would expect, the veloute was about 6 degrees colder than it should be so chilled too quickly,, far too much sliced truffle on everything, I complained about the black Angus, I then overheard the waiter at the next table explaining that it was a black Angus cut slightly tougher than other beef but very flavoursome, funny how the comment changed after I complained! No offer was made after my complaint which considering I couldn’t even eat the alleged black Angus was totally unacceptable ! The Madagascan Tate was really nice, no taster wines offered with the menu so also disappointing, we left the restaurant smelling like the kitchen, retiring to the understaffed bar, where didn’t get served so left . Overall very very disappointing not sure how long they will hold onto that Michelin star !

The South Lodge is a truly lovely experience one I would suggest to anyone. However be sure to eat in the hotel dining room itself and avoid The Pass. The wait staff is poorly trained and quick to interrupt the dining experience often pushing their way into the table. This would be acceptable at a local pub but not appreciated in what should be a fine dining experience. Nonetheless as a diner you should allow for the staff having an off night. However combine this with the lack of quality in the courses makes for a different story. We opted for a dine on the night after valentines with a 7 course meal. The opening course was a forgettable paste in a small core like shell. The second an oyster which was lovely with a complex set of flavors. The table bread was delicious. The butter plain. The next course was a lagistini lobster in a seaweed gel with caviar which was not particularly memorable and had a musty fish after flavor. This followed by a absolutely bland pasta dish that might have come from a grocery store food counter. It had next to no flavor at all. At which point we went to order another glass of wine and asked for a sweeter white wine. The gentleman we asked proceeded “explain that people don’t drink sweet white wines” (this after our first glass which was a mellow Riesling) and if we wanted sweet we should just order lemonade. A rather embarrassing treatment in the midst of crowded restaurant. Certainly not treatment I would expect at 120 quid a plate. The final straw was the wagyu beef that came next. Overdone and stringy would be the most charitable way of describing it. At which point we opted to pay the 249 quid and depart. Honestly the pub in Horsham where we ate lunch out performed The Pass both in the complexity of flavors in the food and the friendliness of service. The only thing worthy of a Michelin in our experience was the price. On the other hand the dining experience and food quality in the main restaurant far surpassed The Pass and is easily accessible as it’s just down the hall.

Up there in my Top 10 best ever meals! We had the 6-course menu and every dish was superb - innovative and delicious with stunning presentation. The service was spot on and we were impressed by the introduction to each course by a different member of the team who all came across as extremely knowledgeable and passionate about their food. Would highly recommend.

We had dinner for four at The Pass in South Lodge.The staff were fine and the decor unusual but OK. The food was very average, very limited menu choices and very poor value for money. £50 a head plus odd extras like £7.00 plus for basic black coffee, Cheese (which we never tried) also an extra of around £12.00.etc. 20% service charge.Came away feeling we did have not have good value for the money spent!Won't be going back anytime soon.

We had a wonderful evening last night. The most fantastic and personal service, we even met Tom who was so friendly and such a nice guy. The food was excellent, we were so impressed. We have eaten at many of London and Brighton’s top restaurants and this is now one of our very favourites. The atmosphere was lovely, relaxed and special. We enjoyed the 6 course taster menu and the wine flight pairing. Every wine was explained to us in so much detail from the brilliant Dominic. This was a truly outstanding dining experience. I thoroughly recommend it and applaud Tom and his team for his excellent food and restaurant.

My wife and I chose The Pass for our 15th Wedding Anniversary celebration. South Lodge is our 'go to' evening out as we have always been made to feel welcome and special, we strayed here on our wedding night in Oct 04 and have always returned whenever the opportunity has arisen.We arrived in the afternoon for a wine tasting in the Cellar. Our thanks go to Dominic, his knowledge is outstanding. He took us on a tour of 6 wines, a English sparkling, 2 whites, 2 reds and a desert wine. I would thoroughly recommend this experience if you are lucky as we were you get Dominic to yourself to guide you and answer all your questions. In the past we have enjoyed eating in The Camellia but thought it about time we tried The Pass. I can understand some of the issues mentioned in other reviews concerning the seats in the restaurant they are a cross between a chair and a bar stool but once this is overcome the evening was perfect. We decided on the 8-course with wine flight. Each course arrived with an explanation from either the waiting team or a member of the kitchen, lovely to see such skill and competence on a plate from the chefs with contrasting flavours beautifully put together.The waiting team were attentive without being obtrusive and we felt able to ask questions about the food which were answered with ease. The wine flight was wonderful each wine matched beautiful with the food - Well done Dominic.I would suggest we have a chef at the top of the game here, producing food at a very high level matched with a team of waiters who enjoy their craft. Very much look forward to returning - the choice now is The Pass or Cameilla.

My wife and I visited South Lodge for our anniversary and booked a table at the Pass back in August 2019. The service was initially very good while the restaurant was half empty, and we received the first four courses in an hour or so. We were disappointed with three of these as they were lacking texture as well as flavour, but we thought we would persevere regardless. As the restaurant filled up, the service started to deteriorate and we had to ask for a top up of wine because our bottle was in a cooler out of reach. We then ran out of wine before the 5th course and once again had to ask for the sommelier; not something we were used to doing in fine dining restaurants. During the second hour we only received the one course which was a crab pasta dish. The pasta was far too thick, the dish again lacked flavour and I ended up crunching on some crab shell too. We waited a further 30 minutes for the 6th course but it all seemed to be going wrong and because of the prolonged wait between courses, we had lost our appetite. We left at this point and refused to pay for the food, agreeing that we would cover the cost of the alcohol. Overall, an incredibly disappointing experience. Poor service combined with below average food at a very high price which we were simply not willing to pay. I would avoid this restaurant until you start reading some improved reviews.

This is a lovely dining offering food wise. Sadly we were hoping for a more luxurious experience which it isn’t. The seating is high tables and bar stools. The decor is a bit dated and the lighting not very forgiving.The food was as expected for a tasting menu, small plates and all very interesting.We didn’t feel full but neither hungry so probably about right.The wine choice was okay, they didn’t have our first choice of a Douro so we settled on a Zinfandel which was delicious.

We met friends to eat at the Pass for a special occasion in March 2019.3 out of the 4 of us ate one particular course.Those 3 came down with food poisoning.The one person who did not eat it was fine.Apparently you need to 'prove' it was that food-which is, of course, impossible.If we had received an apology or compensation we would probably have returned.

What a disappointment! Have thoroughly enjoyed several tasting menus from Matt Gillan and Ian Swainson however today was nowhere as good. The beef tataki was inedible as the meat was tough and chewy. As it was served with a spoon there was not even an option to cut into smaller slices in order to make easier to swallow. The rest of the menu was ok but not up to the previous excellent standards and the flavours were bland and unimaginative.

This was one of our favourite places to eat, so much so, we had spoken about it over the past six months, we had been given as birthday presents both a lunch and a dinner voucher by our children. Having just had a rubbish lunch we will either not use the dinner one or leave it until they sort out their act. Truly every aspect was very poor. Not only was the food odd to hopeless, no one plate impressed, but the choice of cutlery was ridiculous, the sommelier was scruffy and looked over worked even though very few tables to attend. It was clear some of the staff were far from happy as were the guests. It is always very sad to see standards slip to this extent. Previously every course had been attractive, well served and tasty to amazing, very sad now. Tried to find how to contact manager direct but could only find general hotel email address.

Dining at The Pass was one the reasons to choose South Lodge Hotel for our recent short break. However the dining experience ( the hotel & spa were excellent) was disappoint with 4 of the 8 courses on the £90 tasting menu below par. The prawn, mackerel and burrata dishes seemed to follow a similar pattern where the key ingredient was the focus each accented by Japanese spices & flavours. However they all shared a common problem with mushy texture and bland flavouring, umami they were not. The 4th, main course, was lovely but 2 thin slices of duck breast and a chunk of charred chard was insufficient even with multi-course tasting menus. Wine was also a problem with an expensive bottle being recommend, thankfully we were able to try it and reject it as it was not a suitable match for the food on offer. On a positive note the Pass concept where the guest can view the kitchen action is fun and the Lobster dish excellent along with the fried chicken amuse bouche. I did raise our concerns at check out from the hotel, it was noted but no action was taken. Overall quite an under par experience for a £300 supper.

My 4th time eating at The Pass, and least enjoyable, sadly. 1st time under Tom Kemble, it wasn't that food wasn't delicious, it was the atmosphere has completely changed, with the glass partition. Surely thats the whole point of Going to "The Pass" to experience the kitchen?... The TVs have been covered, so now its just a restaurant with no windows??.... We went on a Sunday so maybe thats why lacking atmosphere, also "new" waitress who was a bit giggly, and inexperienced. The Pass has been an absolute favourite for a few years now, but I wont be rushing back!

This was one of the best dining experiences I've had this year. My family and I had the 5 course testing menu and weren't disappointed. My mother is a vegan, and so can often be disappointed by poor choice on meals out, but Tom made her a specific vegan menu that was simply sublime. The meat and pescatarian menus were also excellent, as was the service. My only complaint was that the sommelier evidently did not have enough knowledge of the wines which were being served as part of the wine flight. It sounded as if he had memorised a card and was trying to recite it. Overall though, this did not impact the fabulous food as the wines were still good pairings. I would visit again without hesitation.

What a perfect excuse to take a great friend out for Supper here for his birthday and a year after he lost his wife to cancer. He is a foody like me and boy were we treated to a meal to remember. We opted for the 6 course rather than the 8 course version which was perfect. The combinations of flavours and overall balance of the entire experience was at times spellbinding. Tom you deserve a Michelin star. Your staff are knowledgeable and friendly. The surroundings are of course dramatic and luxurious so all in all this is a jewel in the Sussex culinary crown.

By the end of our meal, nothing had been left on any plate apart from the cutlery, and a little butter. All of the staff, from chef Tom down were friendly and helpful. Before the 5 lunchtime courses started, there were 3 tasty morsels. Alternatives are offered for 2 of the courses, providing helpful flexibility. Silky tofu was a revelation, as I would normally run a mile from tofu. My main course turbot was perfectly cooked, and my wife's lamb was superb,but so was everything we ate.

I think they’ve listened to feedback and clearly made recent changes as our meal was spot on. Every dish perfectly balanced with some interesting flavours. My husband and I agreed it’s the best tasting menu we’ve experienced in a long time...it was spot on. The service was friendly and professional, and we were made to feel really welcome. The restaurant was almost full and had a fantastic buzz about it. I hope they continue with their high standards and get the recognition they deserve.

So I was nearly put off by the other reviews written here and honestly nearly cancelled our reservation. I am SO glad we didn't. My husband and I are very foodie people and we LOVED Tom Kembles 6 course tasting menu. Each dish was so different. The flavours and textures were delicious and the dishes were so light! It's a great setting with the kitchen on full display! The waiters were polite and attentive. We didn't do the wine pairing, so can't comment too much on that but please don't let the other reviews put you off. It's a great meal and a fantastic evening!! 100% recommend!

I took my husband for his 40th Birthday as I knew from previous experience the food was brilliant. I was bitterly disappointed with Tom’s style and presentation and more importantly taste. Previously with another chef we had 2 years ago I could remember the impressive dishes which wowed us....we were given a 10 course menu. This time 6 courses which were bland, unimaginative and lacked anything special. I was disappointed that it cost the same as a 10 course menu and my replacement dish (due to pregnancy) was a pile of bland beetroot! Do not recommend Tom Kimble. Service and atmosphere was perfect as usual...South lodge you need to another chef!

I agree the food was of a good standard and the chefs clearly are very adept and professional. However everything else is just poor. Waiting staff completely dreadful. Decor was dated. Lighting was too bright. Bar stools uncomfortable. My view of sinks and kitchen porters all evening was just wrong. 25 minutes waiting to go.in was an absolute disgrace. But the cost was absolutely disgusting for what is offered. We will never return. Shocked at the previous reviews. I can only think that reviewers have few comparisons. This place is so very over priced for what it offers in comparison to plenty other restaurants in Brighton and Sussex. I am still fuming about my evening here and the shocking amount we have just paid.

I would love to leave a positive review on this restaurant - super front of house, an army of busy chefs, delightful country setting - but I am unable to as the food was both poor and odd. We had the 10 course taster, one of of us paired with the wine the other not. To single out a few of the courses. The rosemary smoked pigeon, the same size as three polo mints for the pigeon, was simply smokey and might have been anything. Cream cheese panna cotta was nice but really just a cheese tart. Ravioli of carbonara was almost inedible; the addition of confit egg with the pancetta made it very fatty, the parmesan ravioli was liquid and only a hint of parmesan. Aged beef sirloin was not tender and the truffle overpowered it. The pudding, apples and rosemary was far too heavy on the rosemary. Overall, the flavours were too similar; smokey and fragrant again and again and again and blended into one another without distinction. And this was such a shame as the chefs have every technique you can think of; water baths, spheres, gels and so on. My parter said some of the wines were just too sweet and insipid. The techniques on offer at The Pass need to be better complimented with fewer more distinct dishes whose focus is on flavour and not presentation and fancy processes.

I was fortunate enough to visit this restaurant with three friends for lunch last Friday and we had an absolutely fantastic time. The restaurant tables are virtually ‘in’ the kitchen next to “The Pass”, so you can watch the process of the beautiful plates of food being created before they are delivered to your table by one of the chefs, who then explains the concept behind each course and tells you the ingredients. This gives you a much greater understanding of the complex process that results in the most delicious food. We were all astounded by how calm it was in the kitchen while all the chefs were beavering away at their stations before bringing all the various elements together at The Pass for plating. It was a completely different experience to one you usually encounter in a restaurant of this calibre and one which we found both fascinating and inspiring. There are two menu options, both ‘tasting’ menus of either 6 or 8 courses, (8 or 10 courses in the evenings), which relinquishes you of the dilemma of choosing what to eat as this way you get to taste all the Chef’s ‘highlights’ - the thought, time and effort that has gone into creating each dish is very evident and all the chefs showed enormous passion, which as they actually interact with the guests, is palpable. The dishes were plated works of art and as the whole process of eating usually commences when you see and smell the food, you know before you’ve even had the first mouthful that you will be experiencing a masterpiece in taste sensation - and what a sensation it proved to be!!! We all agreed it was some of the most delicious food we have EVER eaten; I do not say that lightly either as I have been lucky enough over the years to eat at nearly all the 3 Michelin Star restaurants in the UK, along with many 1 star and a few 2 star. We couldn’t, and can’t believe that this restaurant isn’t recognised in this way by the MIchelin Guide at the moment. All we can say is that you should book a table ASAP and relish the wonderful experience because we believe that it won’t be long before this absolute ‘hidden gem’ gets the Michelin recognition it most definitely deserves, at which point it will be virtually impossible to book one of the only 28 covers - we are definitely going back, and definitely sooner rather than later!!!

Wow! What an amazing place. We brought 4 friends for a birthday celebration. We went for the 10 course tasting menu. Everything about the evening was wonderful. The food was really spectacular but what added to the experience was the fact that the chef for each course came and talked us through the dish. It was so interesting to hear about their thoughts and inspiration. To add to this amazing experience we had the wine pairing. The sommelier also talked us through each wine and why he had chosen it to go with the dish. All the members of the team were enthusiastic about what they were doing and what they were achieving. The Pass was recommended to us by another 2 members of my family who were tottaly in awe of this restaurant. So a month or so after their visit i took a plunge paid them a visit. And what a visit it was. Attentive, professional and friendly staff - front of the house, amazing food and fabulous back of the house ie "out of their comfort zone/s" chefs explaining their food. The food was exquisite - looked and tasted wonderful and staff explaining the food and message linked to every dish just added to the experience. I've ate at some very good Michelin recognised establishments and du etc visit some more - watch out Gordon R :) - but I must say that The Pass delivered as well as several Michelin boys. My bench mark is always The Waterside Inn and Gidleigh Park but boy The Pass were up there. Each and every house was delish.. Scallops, pigeon breast, dessert ...all exquisite; As an ex-banker I'm constantly reminded not to mention money however what you pay is what you get .. Not in this case ; you pay a very fair price for an amazing lunch and still you get much more: great food, fabulous people, attentive and very humane service, total experience....

12 months on and we decided to celebrate our wedding anniversary with lunch at The Pass again. Chose the six course taster with the paired wine flight. Some of the dishes were the best I have ever tasted such as the John Dory but every mouthful is divine including the couple of amuse bouche at the outset. A Wonderful Lunch - The 8 Course Tasting Menu - I had previously heard it described as Art on a Plate, it not only looks superb the flavours are amazing. After experiencing the wonderful afternoon tea at South Lodge a few months ago I decided to treat my husband to a tasting menu for his birthday. We are not expert foodies and know little if anything about wine (!!) but just wanted to have a different experience and a real treat. From the moment we arrived, with my husband's son and wife joining us, we were looked after so wonderfully. We chose the 10 course menu without the pairing but they helped us choose a nice wine, recognising a hugely expensive bottle would be wasted on us but completely putting us at ease!! We loved every course and were all fascinated watching the chefs prepare each dish. We were sat closest to the kitchen and so could see the skill and minute detail that went into every course. The tastes were exquisite and something none of us had ever experienced before. Mind blowing! It was 4 hours of fun and amazement.... and not just about the dining...it was an all round experience having watched the preparation of each dish and then listening to the chefs describe each course... an amazing experience. The chefs were passionate about their creations, genuinely excited about presenting them to us and hopefully recognised how much we enjoyed the whole experience! We were really looking forward after reading the reviews and for our 1st wedding anniversary. The service was a little hit and miss. When I called i told the lady I was pregnant and was assured that the chefs are well rehearsed and I wouldn't need to worry. When we arrived I reminded them again and the waitress then quizzed as to what I could/not eat... which put me on edge. She asked if I could have squid ink (although nothing on the menu included this!) Then when ordering drinks the server said he thought I was being over cautious not drinking alcohol... surely this is my decision? The rest of the service was as we would expect- but not excellent. The food however was excellent. The chefs did take my requirements into consideration and we loved hearing about the dish... however, one of the courses was a gin, cucumber and mint sorbet, I saw the chefs prepare it and just as they were about to bring them over they realised I couldn't have it so instead gave us a tiny bit of plain sorbet. I undersrsnd why they gave this to me... but why my husband?! My husband was really looking forward to this, so was obviously disappointed. We then watched the chefs and waiter staff eating them in front us, trying to hid around the corner!! Overall we enjoyed the food, but for the money we paid and how much we were looking forward to going it was unfortunatley disappointing.

We celebrated our 10th anniversary at The Pass. It wasn't our first visit, so we knew we were in for lots of creative and inspired food. We had the 8 course tasting menu and wine pairing. One of my desserts looked like Oscar the Grouch, made of candy floss and had a hard fruity shell with a sprinkling of cocoa - fun and yum. The wine pairings were perfect with the dishes. The staff were very attentive and knowledgeable - I believe the creators of the dish also brought them to the table and described their creation. One thing I can suggest is somehow reduce the impact of harsh kitchen lighting on the dining area, would really make it a bit cozier.
