Dilsk in Brighton and Hove

A hidden gem beneath the Drakes Hotel. A thoroughly enjoyable experience of fine dining in Brighton. It's definitely worth looking at the menu options on their website to see what you're taste buds are going to enjoy plus, menu options too. I opted for the 4 course dinner. The presentation was excellent and the standout moment for me was the server pouring the bone marrow jus into the circle of piped parsnip, it sat perfectly and made the centre piece of version pop out. I would definitely recommend and return in the future for the taster menu.

This restaurant is absolutely fantastic. The food is sensational, different textures and flavours in each one of the full tasting menu. The service was impeccable too!

Just divine food, I recommend everything. The “snacks” were a must-have, the service was charming and knowledgeable. What a wonderful evening. Can’t wait to come back.

Tucked away downstairs under a seafront hotel is this lovely restaurant. Few restaurants get a 4.9 on Google but this rating is deserved. The lunchtime menu is an absolute bargain, I added the extra starters of which the pig cheek was delicious. Flavours are bold, presentation beautiful, and it’s all deliciously cooked to perfection. Why has it not got a Michelin star? It deserves one. My tiny gripe is the music is loud and not to everyone’s taste and I prefer 175mls of wine by the glass but I can recommend a delicious Alsace rose.

I have been to many restaurants in Brighton, and this is the one! definitely the Best!!

My second trip to Dilsk and it never disappoints. Service is always impeccable, the food is so delicious, with such care and attention taken with the flavours and presentation.

Dilsk is a fabulous restaurant in the basement of Drakes hotel. The tasting menu was a succession of delights. It was easily at the level of Michelin starred food but at a reasonable price. From the snacks ( 3 mouthfuls of heaven) to the final cheesy bites, everything was delicious and beautifully presented. Highlights were many, including the duck, scallop and venison. Staff were friendly and attentive. It’s a real gem in Brighton and we definitely will be visiting again!

The food was great! However, the atmosphere is really lacking at Dilsk which lets the restaurant down.. The lighting isn’t quite right and the dinning room feels unfinished..

Empezamos con un cóctel - bueno y luego pasamos al menú degustación corto. Todavía estoy decepcionado 3 días después - parecía la parte, pero sin sustancia. Un montón de técnicas de presentación - el heno bajo el desierto, la cucharada de las salsas de las pequeñas sartenes de cobre, el pan en el trigo. Sinceramente para un menú degustación nunca había visto porciones tan pequeñas y tacañas. Falto de sabor y complejidad, no veo a este chef recibiendo una estrella Michelin y no malgastaría su dinero yendo aquí. Hay muchas mejores. No te molestes.

We were looking forward to coming to Dilsk, but were very disappointed. We didn't enjoy the food, which certainly looked appealing but was not delicious by any means. Brighton has such a vibrant food scene, I would recommend looking elsewhere.

Ate in Dilsk on Friday night and thoroughly enjoyed my meal. We had the short tasting menu which was a prefect quantity of food. Each course was cooked exceptionally well and was very much of the 'I could never hope to cook that at home' variety. Staff were also extremely firendly and helpful. Not cheap, but well worth it if you appreciate fine dining.

Food was fantastic! The snacks, truffle dish and the desserts were great. My only criticism is the wine pairing, for the price, the servings were minimal. I think we got unlucky by getting the last of each bottle....but if I was to do it again I would just skip that part.

El menú degustación completo fue inventivo y bien pensado. Todo estaba tan fresco. Habíamos comido aquí por primera vez el año pasado y fue incluso mejor esta vez. Comida exquisitamente presentada con buenas explicaciones de lo que está pasando en el plato. Lo más destacado fueron las vieiras, platos de ostras y carne de res y el increíble desierto de levadura que era como nada que había tenido antes. El final de higo un poco dulce para mí. Optamos por vinos de nuestra elección en lugar del vuelo de vino y ambos eran excelentes. Gran ambiente y un restaurante completo con mucha gente degustando el menú “OctoberBest” que sirvió como una brillante introducción a este lugar. Estábamos en el menú degustación de 9 platos, pero muchos de estos platos estaban en el menú de Octubre Mejor también. Este lugar realmente merece su primera estrella Michelin. Crucemos los dedos por ellos.

He estado cenando en Drakes desde que recuerdo - inicialmente cuando era un Gingerman y luego simplemente el restaurante en Drakes. Siempre me ha encantado el entorno, se siente pequeño e íntimo. El personal era absolutamente encantador - acogedor y amable. Los vinos eran grandes y a un precio razonable. Pero la estrella del show fue definitivamente la comida. Sabores impresionantes, platos muy bien presentados y equilibrados. Para mí, está ahí arriba con mis favoritos como Etch y Furna. No puedo esperar para volver y probar el menú degustación completo.

Another fabulous meal at Dilsk . Unfazed by a pescatarian and a mushroom intolerant vegetarian, chef Tom tailored the tasting menu to suit and to great effect . Michelin level dining at an affordable price. Look for offers ...4 courses for £35! Service always warm but unobtrusive . Best food in Brighton .

Wow!! Cannot fault this stunning restaurant. Everything from the service, ambience, wine, food was amazing. We had the short tasting menu, and they let me mix n match from the meat/fish and vegi menu. Small portions that packed so much flavour, we definitely didn't leave hungry!

Superb meal - the skill of the chef is breathtaking. It’s amazing how so much flavour can be packed into a tiny mouthful! Having said that we were very full by the end of the evening. We sampled the full tasting menu and wine flight and enjoyed the explanation about the different grapes and vineyards. I have no hesitation in recommending the restaurant. Diners should be aware it is in the basement of the hotel down a flight of stairs.

We had an amazing evening at Dilsk. We enjoyed the full 9 course menu and every course was delicious. Personal favourites were the cod dish and the blackberry with bay cream. The wine flight was very well paired and explained and we discovered some new favourites. We were made to feel very special and well looked after. Highly recommended!

Dilsk has become our go to on visits to Brighton . The food is exceptional and they are not fazed by a pescatarian , a vegetarian and a gluten free ! Service seamless but unobtrusive ...so warm at the same time . Love the decor , ambiance , unusual wines , cocktails and genius chef ! Don't hesitate ...incredible value for Michelin level cuisine .

Exceptional food, meticulously well presented with well matched wines. We went for the full taster menu with matched wines and it was fabulous. We each had a cocktail on arrival and these were delicious also and served at the perfect temperatures. I wouldn’t hesitate to recommend Dilsk and will definitely visit again. The staff were really friendly and also very good. The first few courses maybe came out a little too quickly and maybe felt slightly rushed but for this quality of food and for the price I really couldn’t fault it. This is definitely a restaurant to watch, wouldn’t be surprised if it won a star soon. Many thanks to Dilsk for a wonderful experience!

Dinner of two half's. I wouldn't rush back again. Some dishes was very tasty especially the chicken but there was some rather tasteless and uneatable dishes unfortunately. The really low point was the vegan option to the brioche which was undercooked with raw inside where my brioche was burnt and not enjoyable at all. Shame as it all looked very nice on the menu. Maybe we were just unlucky.

We chose the set menu and enjoyed the flavours and expertise of the chef . Would recommend a visit we shall go back .

What a great restaurant this is. We went here for a family celebration and we all were so impressed. The flavours, the presentation of the food, the originality and the ambience were all perfect. Proper West End fine dining in Brighton, what's not to like?

This is a hidden gem, quite literally, as it's downstairs from the hotel but is very separate from them. We had an incredible meal here, it's the perfect place for a special occasion. They were so accommodating for a gluten free diet, trying to replace elements as like for like, which I know is a real challenge. My husband and I felt they absolutely hit the notes of balancing textures, flavour, sweet, salty, sour, every element on the place had a place. We've recommended to lots of friends. We look forward to coming back!

Looked forward to visiting Dilsk and it did not disappoint. The taster menus were either short or full and were all well balanced. Each course was excellent with real tingling taste. Service very good and the ambience in the the establishment superb. This chef and team are an up and coming force to be reckoned with. Highly recommend.

What a delightful experience. We had the lunchtime set menu, it was fabulous from start to finish. Unpretentious, beautiful to the eye and a joy to eat. Will definitely return and recommend to all.

Very friendly and relaxing atmosphere together with very flavorful and creative food that was perfectly executed. On top of that: very interesting wine pairing and knowledgeable service. The restaurant also easily accommodated us for one gluten free menu (even for the delicious brioche). Couldn’t recommend it more and will definitely visit again if we are back in the area.

I recently enjoyed a the 10 course tasting menu, every course was fantastic! From the knowledgeable staff to the locally sourced produce and the intimate setting this is definitely a place I will be returning to.

Simply stunning. We went for the 9 course taster menu with the wine flight, and every single dish was immaculate. Extremely knowledgeable staff would introduce each dish and accompanying wine. Thank you for a wonderful 30th birthday dinner!

Lovely little restaurant, great staff and wonderful food, delicious and well played. Loved the crockery, tableware and the decor. Would definitely recommend a visit. My only criticism, which is an easy fix, the door doesn’t close leading to a draft if you’re sat near it. I had to get up a number of times to close it myself, the staff also closed it constantly throughout the time we were there.

Incredible little hidden gem located on the front by Kemp Town. Amazing set menus with wine flights that mix local vineyards with more obscure bangers. Service was exceptional, and the chef, Tom, will bring his creations out and discuss process and flavours. Cannot recommend this place highly enough!

This was such a treat. The facade is unassuming, hidden beneath a boutique hotel but this is no ordinary restaurant. The tasting menu was utterly delicious. We had the short menu but the long one looked equally delicious. Each dish was presented beautifully and had a wonderful balance of flavours. The poached oyster and hogget were stand out for me. I strongly recommend going before they get their (much deserved) Michelin star and (quite rightly) increase their prices. A lovely, unpretentious evening!

Every mouthful of every dish was delicious. My parents and I enjoyed the evening, food and wines very much. The staff and owners are so lovely and really looked after us. WOW - what an incredible meal I had at dilsk with my friends ! We had the lunch menu and shared some delicious wine that was recommended by our waitress. The courses were all delicious, particularly liked the brioche and butter! Would recommend for friends, a family meal or a date! Lovely meal and experience overall

Incredible food! My third time coming and it was just as great this time around. We went for the one off Mother’s Day menu and we were spoiled with a range of delicious courses. In particular the rhubarb dessert was a highlight, and of course the brioche was as good as ever. Excellent service, the chefs and waiters were super attentive and friendly. Would recommend 10/10! Definitely coming back again :)

Carefully curated menu, bold and beautiful choices made by Chefs, confident in their product and offering, an absolute hidden gem and a treat. Can’t wait to be back again. Discover one of Brighton's rare gems – a restaurant offering both delicious cuisine and excellent service. The chef works magic in the kitchen, and the staff on the floor adds a touch of fun. Despite the downside of lacking parking if you are not a hotel guests, my rating remains high. Looking forward to returning soon, especially when the new menu is available!

What an amazing evening! It was the better half’s birthday and time to properly spoil him. This place is fab! Impeccable service from staff and an amazing tasting menu with the accompanying wine flight - I would try and describe but better to just look at the pictures lol. The turbot was unbelievable!! We’re on pot noodles for the rest of the month lol but well worth it!

We had an amazing meal here whilst staying at Drakes Hotel. Great service. Maddy and her team were very professional and kind too. The full tasting menu was inventive and well thought out and well presented too. Everything was so fresh. I am fussy re fish and shellfish and it was all excellent. The venison with truffles also a highlight. The room is a little tired and our meal was slightly spoilt by a very noisy chap in the middle of the room broadcasting his opinions at top volume. He even competed against the music. Not the restaurants fault but it was difficult to hear my partner at times. A great evening and maybe a Michelin star in the future? I can’t wait to return. We were looking for a fine dining restaurant in Brighton to go to after our wedding ceremony, for an intimate party of 10. Dilsk @ Drakes hotel in Brighton pulled all the stops! Not only could they facilitate a private dining room, but also adapted their fine dining menu for three children aged between 7 and 12. Serving them pasta and delicious nibbles. They provide two canapés on arrival, which left our mouths watering and excited for the rest of the food. The adults decided to go with the short menu and it was incredible from start to finish, with all locally sourced ingredients. The price was very reasonable too considering the quality of the food and ambience of the room. We honestly couldn’t ask for anything more out of the experience we had. Maddie and her team were faultless, super accommodating and never let a glass go empty!! We cannot wait to return to this local gem.

Beautifully presented, absolutely delicious, and just a stunning meal from start to finish. The owner was lovely too and made us feel so welcome. Great experience and would recommend to anyone - a bit of a hidden gem and I'm sure it's going to be hard to get a table the more people keep discovering it!

We booked Dilsk for Saturday lunch having found it on google. The pictures and reviews looked great and I have to say we were not disappointed. The restaurant is in the basement of Drakes Hotel. The decor is a little unimaginative but welcoming enough and was relatively busy for a Saturday afternoon. The real star of this small restaurant is undoubtedly the food which is of the fine dining variety. We had the reduced tasting menu which was fantastic. Tom Stephens has certainly learned his craft from Tom Kerridge and Stephen Drake. Each course was beautifully presented and tasted fantastic. Modern dining at its best. The service was spot on with friendly and knowledgeable staff. Overall we thought the meal was good value for the type of restaurant this is. If they continue to keep this standard up they could be posing a question for the Michelin Inspector. Were sure to return.

For those with a passion for exquisite cuisine and a desire to tantalize their taste buds, this is a must-try. The culinary experience was simply outstanding, with each dish cooked to perfection. The quality of the cutlery was impressive, and the presentation of the entire meal was truly top-notch

What an absolute gem of a restaurant to have in the heart of Brighton! From the moment you walk in and are greeted by the amazing staff, you know you’re in for a great experience! I went with my fiancée and and we had the full tasting menu between us and everything was incredible! The food here is literal art, and the visuals are backed up by amazing and creative flavours. I think the food is seasonal, so expect new and exciting flavours and combinations at different times of the year. The wine we had was also delicious, both reds, one being from Peru and the other Italy. And staff continually kept us glasses topped up, and explained dishes to us. The head chef even came table-side to present some of the dishes to us, explain what they were, and then garnish with sauces where necessary. This is a special place and I can’t wait to go back and take friends and family with me!

As each course came it was our favourite so far :) the staff were all very friendly and welcoming, will definitely return. A brilliant find on brighten sea front, extremely reasonably priced for all the exquisite dishes.

An expensive treat, but if you’ve got £200 to burn on a tasting menu, don’t treat yourself there. Mediocre food, served with plenty of top presentation skills, but each course lacking in different flavours from the one before and no texture variation from one serving to the next. Inconsistent gaps between courses and little environment in the restaurant. Basement location allows for a dark environment but borders on dingy with no natural light.

Recently dined at one of Brightons newest restaurants Dilsk. The restaurant is in Dukes hotel on the seafront almost opposite the pier The menu is a tasting menu with either a wine flight or non alcoholic flight. The food was well executed full of flavour and the wines and service we perfectly matched Overall a brilliant dining experience from a great chef and service team

We had a beautifully designed meal here last night. The food was truly art work. So much thought had gone into presentation of each course. We had the full tasting menu and it did not disappoint! The snacks to start were delicately put together.. my favourite being the wagyu pastrami, delicious! I have never dared try an oyster before but this oyster dish had so many flavours it was supreme. Monkfish with crab gnocchi was another gem. The whole menu exceeded our expectations! Also have to mention how great the cocktails were! And our fab waitresses! We will be back! My chef son and I visited Dilsk for a birthday meal on a Tuesday. Not the busiest night we thought. But we were far from disappointed. The welcome and service were on point throughout our fabulous evening and the food was majestic. Strong flavours and textures, without being overpowering and the presentation was exquisite. The chefs also explained different courses ans were clearly enjoying their work as well. Great cooking and fun food. Strongly recommended. Dilsk is delicious.

Short tasting vegetarian menu for dinner on Friday night. Good ambience, started out empty, but got more busy through the night. Knowledgable staff, most ingredients locally sourced and either organic or biodynamic certified. Spectacular combinations of flavour, texture, smell and sight, with enough whimsy and playfulness to keep me smiling the whole time. Unexpected surprises were the dulse, laminated brioche, the pickled mushrooms, and the cone with the lavender ice cream (which was a delight in itself). Fabulous value for money, have eaten better food, but only in Michelin starred restaurants - Tom Stephens is sure to get a star in next years guide.

Dilsk is an absolute hidden gem. The food is some of the best we've had so far in terms of taste, presentation, imagination and artistry. It's a little hard to find, in the hotel and down the stairs but we'll worth looking for. We will be back for our next special occasion celebration!

This restaurant is a hidden gem. The quality of the taster menu is excellent with a good range of elegant and flavour packed dishes. The wine flight is imaginative. They have found some rare grapes, and the quality rivals and surpasses most other wine flights we have had. The staff are fabulous and engaging adding to the fabulous experience of the evening.
