Bril cocktail bar, fab friendly, relaxed atmosphere. Cocktails to die for. And bar staff are so welcoming & friendly. I love this place. ❤️

We’ve visited many cocktail bars in London and Amsterdam and this one was really really good. Enjoyed every sip of our drinks. Very laidback vibe, background music was a bit R&B ish, very nice. I liked the West Bay Swizzle in particular. Some sweet, some bitter… some fruit… some spice which gave it a nice kick. Edit1: went back the next day, ordered the Sherry Cobbler, what a beautiful drink!! Edit2: also went to Wild Cat, Bramble, and Panda & Sons this weekend and while all these cocktail bars had their own charm, the drinks at Palu were by far the best.

One of my favourite bars in the UK. Knowledgeable and very friendly staff, outstanding drinks (especially the range of negronis) and a chilled vibe. Love it

Best cocktails in Edinburgh. Hands down

A vibrant place to have a few pre-dinner drinks! I was in love with their White Strawberry Negroni. Can't ask for more on the drinks, snacks, and the atmosphere. The only minor downside of the whole experience was that they were short of staff on the day we visited so the services were a bit slow.

We just had the drinks but the service was fantastic and the cocktails were delicious. Such a chill vibe, would recommend to anyone wanting a quiet drink

HOWEVER, I would like to give further details about what happened so the reader can appreciate my initial review. When I asked for the bill, I was not given one. The waitress directly handed me the payment terminal with an amount of £11.05 (which I read as 11.5, but I might have been wrong). To me, this felt coercive and not discretionary, as the only way for me to avoid paying the added tip was to confront her and ask for the bill to be issued. Also, I can see that I am not the first one to complain about the service charge, so it might be good to review this specific practice to match your service standards. ---------- Original comment: Abusive forced-tip practices. I went there for just one drink. It was a £10 margarita, the waitress charged me a £1.5 extra for tips without even asking for my permission. The drink was good but the tips practice quite disgusting.

We only had drinks so can’t comment on the food. The cocktails were lovely, quite small though.

Great cocktails in a very friendly bar.

This one was a popular rec of many bartenders and it did not disappoint. The bartenders there were super fun and engaging. I ordered a Paper Plane and they gave me a piece of paper to make a paper plane out of! And then you have to throw it and hope it lands somewhere good haha. It was quite an unexpected and enjoyable moment - thank you!

Fantastic selection of cocktails, really nice atmosphere and knowledgeable waiting staff. Highly recommend the dealer's choice to get something a bit different and allow the bartenders to show off. The miso white russian was a delicious and unique highlight but I think you'd struggle to go wrong. Will definitely be returning to this little gem.

Fantastic selection of drinks not seen in other places that were all delicious, at a decent price! Dipping bread was some of the best I've had. The staff were a perfect level of attentiveness that they weren't overbearing, but you still felt looked after. Could spend hours in here, perfect end to our trip to Edinburgh <3

BEST BAR IN EDINBURGH! The most attentive (but not overbearing!) staff I’ve ever met in my life. It’s clear that they truly care about good drinks and excellent service. We told them that we got engaged this morning and they were kind enough to bring us a glass of Fizz each on the house! My personal fave was the Coconut White Russian (espresso martini tasting!) or the Nutella Bourbon. We also ordered some of the food and got the focaccia and it must have been freshly baked as it was piping hot and delicious. Highly recommend! Great value for money.

Hey Palu is hands down my favourite bar. I've been visiting for the last 3 years and it always provides me with a great experience. It you want a nice place to chat with some friends over drinks with great flavours and friendly staff, Hey Palu never fails. The Godfather is a favourite drink of mine. Perfect date venue or place to catch up with a couple of friends. Just make sure you book ahead so you guarantee your seat! Honestly, one of my ambitions in life is to get my own plaque to designate my own seat. Keep doing what you are doing guys. 🥃🍸

Awesome find. From the moment you walk in the service is perfect. Friendly & unpretentious. Cocktails are the best I’ve had in such a long time. Nibbles superb and reasonably priced. So refreshing to find a bar that gets it right!!!

I’m so happy I discovered this place! Small place with great atmosphere. I love the design, lightning, music in the background. All really adds up there. From entry we felt very welcomed by the staff. And through our visit we were well taken care for. Selection of cocktails is amazing. Small tables and dimmed lights makes it feel so private.. love it! We definitely we'll be back there ☺️

Amazing drinks , food and service

I love this place, we come back every time we’re in Edinburgh. The coconut White Russian and the passion fruit daiquiri are my favourites. Staff are so friendly too. Thank you!

Negroni flight is disappointing, doesn’t taste good. Just a gimmick. Had 2 drinks and then they refused to serve our group of 3 anymore without giving a reason, just that it was at the staffs discretion without elaborating. We explained that we weren't drunk and how we were confused at the decision - thinking it must have been something we said, or that they misheard. None of us were at all drunk or doing anything that would warrant this. Edit in response to reply: We each had one drink with a meal an hour before we arrived, we had just been at a show, so definitely did not arrive “obviously drunk”, and definitely none of us would have insulted any member of staff. (Have you confused us for another group?) We spoke quietly amongst ourselves the entire time. This was a really weird experience and other, better, cocktail bars were happy to have us. We had 2 drinks each in 1 hour 45 mins, while drinking lots of water and having the bar snacks, not exactly going to cause anyone to become extremely intoxicated to the point they can’t be served. There were certainly people next to us who were seemingly more drunk, and louder, but that's what is expected at a bar during the busiest time of the year. I also booked a TABLE for 4 and we were squeezed in at the bar, with 3 of us, though didn’t complain about this. Lucky it was just 3 of us not 4, otherwise we wouldn’t have been accommodated. We have been to many of the best cocktail bars around the country, we have worked in hospitality, there is absolutely no chance that any one from your staff was called that, so this is a misunderstanding, or trying to discredit my review. If we were too drunk and asked to leave I would accept it the next day and say the judgment was fair and you're just doing your job - but the reason I am bothering to write this review at length is I know how much we drank before arriving, I know how we acted during the time there, and I know that we were not causing any issue. I seriously question the judgment of your staff, and I wonder how you are able to serve anyone at all if that is what you consider to be too drunk.

The drinks were delicious, the service was lovely, and the atmosphere was cosy. The only problem is that the music was played wayy too loud, my friend and I couldn’t hear each other well and because everyone had to speak louder you could hear everyones conversations, at times over your own. Mellower music and quieter would’ve made the experience even nicer!

Such friendly, knowledgable staff- and fantastic cocktails! This is one of our favourite bars in Edinburgh, lovely place to just chill and chat with perfectly balanced drinks. The menu changes regularly too (have to ask though guys… when is the Daiquiri Verde making a come back?!?). It’s a great treat night out.

We had a lovely time at Hey Palu. The staff were fantastic, and it had a lovely atmosphere. I see why it has such a great reputation. I loved all 3 of my drinks.

I can't but say the absolute best for this beautiful bar and the amazing staff! Not only they were accommodating (although we were one hour earlier than our reservation) , they also provided cake to my partner for his birthday. The service was top, the cocktails were all delicious. I would definitely recommend this little gem to everyone!

Decided to go on Sunday evening after another bartender's recommendation. The levels of cocktail knowledge and skill were great to see in action. If it's not too busy, I highly recommend going for 'Dealer's Choices' to try some flavours you'd never think to mix.

Amazing vibes, atmosphere, buzz, and truffle cheese. The cocktails are out of this world delicious sour is my fave. Will be back soon

Serendipitous find. White Strawberry Negroni was exquisite. Staff were skilled in their craft, and their customer service was exemplary.

What a lovely place to spend some time. A Negroni fan? Try the Negroni flight....a real eye opener! Also tried the Godfather which was superb. My wife had the White Russian which was fantastic and along with the beautiful focaccia and olives, a great combination. The service we received was top class too and it really adds to the whole experience when they describe the cocktails in such detail. A great few hours and definitely recommend!

Muy buen lugar de la calle Pan. Acogedor y animado ambiente, el personal conoce allí cosas y mantuvo las cosas en movimiento mientras completaba nuestra educación de cócteles. Después de haber visitado otros bares de cócteles cercanos y más en Glasgow, este parece tener todos los ingredientes adecuados para el éxito.

Qué gran bar de cócteles, nos encontramos por accidente, mientras esperaba para ir al Military Tattoo, Castillo de Edimburgo. No habíamos reservado, pero uno de los camareros organizó rápidamente 2 taburetes en el extremo opuesto de la barra. Estaba muy ocupado. Tuvimos un par de cócteles / cócteles cada uno, y tapas muy sabrosas. El lugar tenía un gran ambiente, con buenas opciones de música para el ambiente. Todo el personal era excelente. Esperamos volver pronto.

An excellent place if you are looking for some great cocktails with some lively atmosphere. We went on a friday night, and things were very busy. Reservation is recommended. We had a bunch of cocktails and all of them were fantastic. Light, well balanced, and well crafted right in front of our eyes. We got the Negroni Flight, Nutella Old Fashioned, Lillet Fizz, The Godfather, Spicy Paloma and a couple of Amaros. Distinctly good. I loved how some of the cocktails come with their own activities, like the music box with the Godfather or the paper plane with the Paper Plane. Great place for a night out. The ambience, banter, drinks, showmanship, all come together and you won't be surprised why this is one of the premier cocktail place in the UK currently.

The banana sherry cobbler was one of the best drinks I've ever had. Perhaps the best. Extensive cocktail list with bartenders willing and able to make something bespoke according to the drinkers whim. Nice music and seating. Lovely service. I would go back in a heartbeat.

Outstanding cocktails and service!

Easily the best bar in the city, if not the best I have been to in Europe. Always welcome whether a quick nightcap or a bite to eat from the guys behind the bar. Can’t recommend highly enough and will continue doing so to anyone that listens! Service impeccable with a drinks menu to match.

We had a couple of cocktails and some tapas at the bar before a show, and it was superb! I can highly recommend the rude Cosmo - packs a punch and looks beautiful too. Also tried the cosmo spritz which had a zing and refreshing. We had truffle pecorino and crackers - delish- and warm focaccia. Set us up for the night! Can’t wait to return - my new favourite bar in Edinburgh!

Amazing cocktails and amazing aperitivo. Atmosphere is brilliant and a beautiful bar. Selection is one of the best I've seen, certainly in the amari and vermouth world. I recommend this place to everyone.

The staff were very nice people. The cocktails are amazing. I loved that they served martinis in a bottle from a freezer with a chilled glass to make it super cold.

Ben, Becca, and Rhys were all outstanding and excellent at doing what seemed like a million things at once. Truly engaging with the customers, making amazing drinks, dishing out food, and all maintaining a welcoming and warm spot. We stayed for more cocktails than we usually do anywhere - the drinks are some of the most tastiest things we have had in a long time. Get the White Russian, you won't regret it. We will be stopping in again and again next time we are in Edinburgh.
