Fantastic bar with great atmosphere and incredible drinks

This place is the perfect aperitivo experience — drinks, food, and service all 10/10! A really welcoming place, both staff and fellow patrons.

We only had focaccia bread but my, so tasty. Cocktails were excellent and they were happy to make cocktails not on the menu. A gem and an oasis in Edinburgh.

Booked on a Monday night and was welcomed to the bar by the owner Alex and a bartender, Rhys. Myself and my partner both sat at the bar and had a great chat with both about their love of cocktails. The dinks are phenomenal and I said to myself with at least 5 drinks down that each was the best I have ever had. The music and atmosphere is amazing and the selection of spirits is unlike any you will see at another bar. Overall, the hype is real, the professionalism and decor are second to none and the drinks are spectacular. Thank you Hey Palu for making my night and my partners birthday special!

Lovely staff, great food, and amazing drinks.

This was our second time visiting as it is a lovely spot with a great atmosphere. Great cocktails and loved the innovation of the negroni flight. One downside was that we did regret sitting at the bar as our conversations felt constantly interrupted (though apologetically) by bar staff asking us multiple times if we’d like to buy food and asking if we wanted more drinks when we hadn’t yet finished. We left feeling the service was invasive and the aim was to drive sales more than for us to enjoy our evening.

Everything was so good and our server Gracie was absolutely amazing! Would 100% come back again ☺️

Excellent drinks and even better service! We mentioned our anniversary in our booking and the staff went above and beyond to ensure we enjoyed our time. We even chatted with the owner for quite some time. The bartender also spent extra time crafting my mocktails which was greatly appreciated. Highly recommend on your next trip to Edinburgh!

Not going back there for sure… Sat down for cocktails and at first staff seemed very attentive, asking about our day. However, after ordering a cocktail called Mango swizzle, I said to one of the guys that I am having trouble drinking it since it had so much crushed ice that was getting stuck in my straw. His answer was ‘Oh a typical swizzle, right?’ and he went back to his business… So we asked for the service charge to be removed, to which he answered that is not possible with no concern of why. But because we questioned that since it should be voluntary, he went to his manager, I assume, and came back saying he’ll charge only for the drinks. Again no interest in why we asked for that…My friend once again said ‘this should be voluntary you know’, he simply ignored her, showed her the PDQ and said ‘that’s £10 my love’ …. So disrespectful! I have worked and eaten at 5* restaurants and hotels and was never ever told service charge cannot be removed….

Don’t go to Hey Palu. They add a “service charge” to the bill and then make it out to be a huge problem to remove it. Give your customers a choice and stop automatically adding service charges. Edit: I see they’ve already replied, stating it’s “discretionary”. If it was “discretionary” there wouldn’t be a problem. But if you stick it on the bill and cause an issue when asking for it to be removed, then it’s no longer discretionary, is it?

Best Negroni I've had in a while

We didn’t eat but the olives are amazing. My favourite at in Edinburgh. Best negroni, great service and fabulous atmosphere 💚

What a special place! Visited for the first time with friends and had a couple of cocktails each. Fantastic atmosphere, incredible cocktails (highly recommend the army and navy and Nutella old fashioned), wonderful team. Thank you for a great evening 😊

Booking essential and definitely worth it! We had a seats at the bar and enjoyed some negronis and another cocktail each, and cheese and salami plates. All delicious and the spot on and friendly service was the icing on the cake - a very professionally run bar and it shows in the best way.

One of the best cocktail bars we’ve visited. The drinks were great, the atmosphere was amazing and the service was better than anything else I can remember. Would 100% recommend asking for a random cocktail of their choice; they gave us some great off the menu ones which was a lovely touch.

Great cocktail bar serving delicious array of cocktails - I can vouch for the dryness of the martini with olive and droplets of olive oil. We could have stayed all evening - and will do next time!

Went in after a show at the Lyceum and it was perfect for wrapping the night up. It’s interesting how the clientele/atmosphere changes through the day (along with the choice of music 😁) from early to mid to late evening now that I’ve been in at these various times. I’ve not made it through to “chucking” out time yet but I’m sure that will come Service was exceptional, the staff just seem to know when you are ready for another drink. I’m a big fan and thoroughly recommend it

This review is biased - I love this bar. Last year we went for pre dinner cocktails (I had only recently discovered the bar thanks to a friend), we loved it so much we knew we'd be back this year. This bar offers some of the most diverse, interesting and all round delicious cocktails I have ever had. The team at the bar are excellent - they are incredibly warm and friendly, while offering a very luxurious drinks service. This is definitely a place to go for a 'fancy drink' but also has such a relaxed atmosphere. The snacks menu is also absolutely sensational. I can not recommend enough - if you are in Edinburgh it is a must for a cocktail/mocktail.

Last night vibes at Hey Palu, Edinburgh’s chic Italian bar! 🍹🇮🇹 Sipped on some aperitivo-inspired cocktails, and the “Banana Jungle Bird” stole the show—so banana-licious! 🍌 Also, the coconut White Russian? Totally awesome. Shoutout to the friendly staff! 👏

Top bar in Edinburgh, hands down! The banana jungle bird is the best cocktail I have had in a very long time. Staff were attentive but not overbearing. Great selection of drinks. 100% would return

Only had the focaccia food-wise but it was delicious and I’m looking forward to trying more! Really friendly service, Hey Palu have hit the nail on the head with being attentive but not overbearing. All of the staff were lovely and we had a great time (and maybe drank a lil too much wine…but enjoyed every drop)!

Cocktails are great - very creative and tasty. The problem lies in the service. We were constantly approached by staff asking if we wanted another drink and conversations were interrupted a few times, even when it was clear everyone at the table was only about 50% through the last round. This happened 4/5 times in our 2 hour booking. At first I thought these interruptions were just innocent mistakes, but shortly after I overheard a waiter approach a couple who had paid 10 minutes before and ask them to leave if they were not going to order another drink. It feels more like a hard sell than a chance to catch up with friends. Considering the price point, you’d expect to be given some time to leave and to not be hounded to order more drinks.

What a wonderful place! Was already expecting a lot, given awards won and having looked at the cocktail menu on line, but got way more. A lovely greeting when we first arrived, a brilliantly welcoming interior and exceedingly prompt, friendly and knowledgeable service. And that’s before we even get the the cocktails: bliss! Between 4 of us we tried 8 different types. All gorgeous and so well mixed. You will be offered a food menu too, and you should take it: the most elegant bar snacks ever invented including a focaccia that is possibly one of the best things to eat ever. Could not recommend this more highly, it is an amazing place.

A gorgeous cocktail bar with a wide ranging menu and an additional 'dealer's choice' option if you fancy something a little different. They've also got a select snack menu (yet to try, but it sounds incredible!). It's got a classy, intimate vibe and honestly the best, friendliest staff. I'd highly recommend!

Anyone that knows me will realise I'm a rough and ready bar type but this place is top quality and very very good. The Godfather cocktail was fab and Marlon Brando staring at me with every sip. Very comfortable bar stools were a delight as was the chat with the fab staff. I'm glad my son took me here yesterday!

The "snacks" are the best accompaniment to a perfectly tailored cocktail - it can get a bit loud but that's only because it's such a popular spot! The staff know their stuff and if it's not on the menu, you can bet they can make something delicious just for you!

Excellent cocktails, with a funny gimmick (DIY paper plane) with a variety of tasty, Italian charcuterie, focaccia and cheese! The staff is very attentive and knowledgeable about cocktails. Highly recommended!

Everything about Hey Palu was excellent. The space is beautiful, the drinks are expertly prepared, and the food is delicious. We had a brilliant time and came away glad that such a wonderful place exists. The Delicious Sour (actual name) was a standout, and some of the best use of calvados and aquafaba I’ve experienced. The above is all a long way to say go if you can, Hey Palu is a stunning experience.

Hey Palu is a must visit for seriously good cocktails, great service and an all round good vibe. They clearly really care about making outstanding drinks and each time I've visited I've been really impressed. Their house martini is especially delightful, served right out the freezer with truffle olives and olive oil on the side. I also love that they do a whisky of the month - something very interesting that you might not find anywhere. When I visited last it was Benriach 16. I look forward to my next visit when I'm in Edinburgh again!

I’ve been coming to Hey Palu since it first opened, and it’s been the same incredible experience every single time. Being welcomed by the staff like you are an old friend, Alex and the gang are equal in both Talent for hosting, and skills in creating a Liquid 5 Star Experience. Best cocktail for me… the Paul’s Martini (please bring the Basil oil though🤤), Yuzu Marg might be a very Close second…maybe the Bianco Spritz? Does the Negroni Flight count as one drink? My absolute favourite bar in the city. It has an intimate feel and cocktails that smash it out of the park and are made with care. Pink Pigeon Club being an all time favourite, but every time I go, I'm tempted by another one or two! Service is second to none.

Amazing place. Disappointed that I only discovered it this year! Having said that been back a number of times now and it never ever disappoints. Drinks are special and light bites are fantastic. Reminds me of being in Italy.
