We had an amazing experience last night, we were blown away by the food. The flavours were incredible, so imaginative. I have never had a meal like it before. We marvelled at the work that went into each course, everything looked amazing and tasted astonishing.

Truly superb meal last night. Every course was absolutely delicious. Attentive - but not overly so! - staff who were passionate about what they were serving. Highly recommended!

This is one of the nicest fine dining restaurants in Bristol. The ingredients are very fresh and come from sustainable farms. The food is delicious and the staff takes the time to explain all the drinks and dishes. A great place for a special meal or a date!

Overall this was a great tasting menu experience, flavours complimented each other well and matched nicely with the wine parings and the service was top notch for the most part. However, there were a couple of things that let it down. Firstly, my partner accidently knocked over one of his full drinks, when he let the waiter know he just brought over a new napkin and didn’t attempt to refill the glass, which is what I would expect as a goodwill gesture from this restaurant when we are spending this kind of money. Furthermore, we were rushed through our final two courses due to the table being required for the next booking. Fair enough we were advised the table would be needed back in two hours but the restaurant controls the pace, and we were waiting a long time between the first few courses and then being rushed at the end, being handed the receipt to pay before we had even finished the final course. It is also worth noting that it is a very loud restaurant and sometimes you struggle to hear the descriptions of what you are eating. Overall, I would come again but the experience was tainted somewhat.

Fantastic. The best fine restaurant in Bristol.

When we booked Wilson’s, we hadn’t appreciated there was no a la carte menu and it was a fixed 6 course menu, so it was surprise on the day - and it turned out to be a very pleasant one! The seven courses were genuinely special and exquisite, showcasing great fresh ingredients from their own farm. compared to other similar restaurants in Bristol such as Chef’s Table and Casamia, the food here is uniformly superior and every single dish stood out on its own and also blended into a whole. There’s lovely little touches in the details - the deliciousness of the sauces, the sorbets, popped bulgar for crunch - and the starters and deserts in the menu flight particularly stood out. There were some nice soft drink options, and we went with our host’s recommendation of the Douglas Fir lemonade that was beautifully dry. Service was attentive and helpful throughout, with each dish being talked through but not is such a way that it became disruptive. Staff were clearly proud of the dishes and genuinely pleased people were enjoying it. Definitely a place we’d revisit

Not that Wilson’s needs another 5 star review, but it boasts excellence in every area. Service was outstanding, with knowledge about every dish. The tasting menu was well thought out, made with seasonal produce from their own land. Doesn’t really matter what is on the menu when you go, you know it is going to be top notch.

Absolutely lovely meal. We came here for a celebration and saw that they do a taster style menu. Incredible variety of food and all the dishes were 5 stars. A particular favourite was actually the appetiser.. oyster and rhubarb ice cream! Took us by surprise :)

From the welcome we received when we arrived, to each course of the menu, to the attentive staff the whole experience was just perfect.

We got a voucher as a present and booked to go here in early March for the lunchtime service. It was such a lovely experience, the staff were very welcoming and knowledgeable. For a fine dining restaurant the atmosphere is really relaxed and unpretentious. I can't remember exactly how many courses we had (maybe because we also had the wine flight!) but i do remember that each one was delicious. The wine pairings were really complementary and elevated the experience. Thank you!

Definitely worth the trip over the bridge from Cardiff. Lovely customer service in a relaxed style. An eclectic and interesting menu full of delicious surprises - the herb sorbet with Italian meringue was the star of the show by a whisker. Highly recommend.

With advanced notice Wilsons were able to create a vegetarian and coeliac/gluten free tasting menu for me which was absolutely phenomenal. Every course was delicious and the flavours just amazing. My dinner companions had the ‘normal’ tasting menu and were delighted with their food too. Very grateful for the efforts they went to - thank you!!

Stunning in every sense of the word.

I flew in from the USA and hit them up to make a reservation months in advance. They accommodated me and the reservation was there when I showed up. The food was phenominal. It was a tasting menu. About 8 courses. We were all very happy with everything. The vibe inside is very relaxed anf laid back. Considering the cost if dinner I am suprised more money hasn't been put into the decor, though I don't feel it detracted to much from the experience. Would definitely go back!

I brought my mother here as an early mother's day treat. Everything was impeccable! We had the fabulous Phoebe serving us who was an absolute delight and know everything you could possibly want to know (including the type of soil the vegetables are grown in haha). The food was out of this world and it was especially lovely talking to some of the chefs at the end. We'll be sure to come back again soon

Amazing food with really decent prices for a tasting menu with such quality food and amazing service. I only have good things to say. Everyone working there we interacted with was friendly and warm. Love the focus on local and seasonal produce. Everything tasted super fresh and bright in flavour. I also loved that they did wine by the carafe so could try a few throughout the meal without going in for the full on pairing.

My favourite restaurant in Bristol by a mile. Quality food, worthy of all the stars and praise it gets. Relaxed, friendly vibe, zero pretence. The team are amazing. Don't hesitate.

An amazing food experience that had been on our list for a long time, it definitely exceeded our high hopes! Everything was cooked beautifully with so much creativity in the flavours and dishes. Service was excellent and a gorgeous pared back interior aesthetic too. We dined here in September 2023, highly recommend.

My husband and I got this as an anniversary gift and the food was absolutely delicious! The staff were extremely attentive and answered all of our questions about the dishes. The place itself is quite small but has a lovely, bistro atmosphere about it. Each and every dish was packed with interesting flavours and odd (but wonderful) pairings. All from their farm and homegrown, the food was bursting was taste and texture. I can imagine each time you go it would be a new experience with their ever changing menu. It’s on the expensive side so it’s perfect for an occasion or if you fancy somewhere special. We will definitely be visiting again!

This has been our favourite restaurant since we ate there 5 years ago. We were expecting something exquisite but were overwhelmed by the flavours we were offered. The bar gets higher every time.

This is the third time we've eaten at Wilson's and the food and the atmosphere seem to get better with each visit. A ten herb sorbet with Italian meringue is certainly the best palette cleanser I've ever eaten. Gloriously inventive, but delicious. What struck me about the restuarant was the energy and passion, which is reflected in the food. Surely, on track for a Michelin star.

We went here on last Friday for my birthday meal, it was a lovely birthday treat from my cousin. We heard a lot about this place and finally managed to come and eat here. We sat down and in around 10 minutes we already got the first course... but nobody has asked us for any drinks, so we got the drinks after the second course but only because we asked if we could order some drinks. The food is amazing, a lot of flavours and many surprises. The dishes were small but enough for us. My favourite was the trout dish, unfortunately I had 2 big bones in the trout. I told the waiter and the only thing he did was saying "oh sorry" and that' it..... I do hope they understand how dangerous it can be. So for everybody else: be careful with the trout dish. The young lady who was working that evening was very friendly and knows a lot about the menu. Unfortunately I won't be giving the 5th star because of the service we received, I really do expect a bit more for a Michelin Green restaurant. I would definitely come back but won't rush for it.

Our favourite eatery in Bristol by a country mile. We have visited twice, a couple of years apart, and on the second visit the chef patron came over to talk to us, recalled having spoken to us before, along with exactly where we had sat the prior visit, and recalled the exact conversation we had about the produce on the menu. A true gem of Bristol. Hell, it’s a diamond of the British culinary landscape.

I’m having to readjust my ratings as I can’t give six stars, therefore anywhere else I’ve given 5 stars previously, albeit for good reason, is not on the same level as Wilson’s. Fantastic from start to finish. I would have photos of every course but getting one’s phone out to do so in a setting such as this would be uncouth. If you enjoy food, eat here.

The most delicious meal. Perfectly cooked. Service was great. We went for my husband's birthday lunch and had the aperitifs ,6 course taster menu with wine flight. Absolutely 💯 gorgeous and fabulously paired wines. My only criticism, we only were able to have the table for 2 hours (it does tell you that when you book), but as a result, it did feel a bit rushed between each course (I was still savouring the previous dish when the next arrived), we had to be out exactly when the 2 hours was up (next customers arrived)..which was literally as soon as we had finished. This was a shame, especially considering the amount of money we spent. Perhaps an extra half hour could be allocated if you state when booking you would like the full taster menu? That said, this was great.

Service was great. Atmosphere is a little cramped food, although very interesting and obviously cooks with a lot of love was just too small. The portion sizes are miniscule. I realised it's a tasting menu but for me when I leave a restaurant I would like to feel satisfied

Fantastic restaurant and a great concept, with most of the food grown at their own local farm, and other ingredients as local as possible. Service is brilliant with very knowledgeable and passionate staff. The set menu when we were there was a really unique mix of seasonal veg, seafood, and game, and while a couple of the dishes maybe overdid the flavour overall it was a really good meal. Get in there before Michelin do and the prices go up!

We visited Wilson’s for my birthday and the food was absolutely spot on. Tasty, rich, flavoursome, well presented, gorgeous. Great menu. The confit trout was a winner for me, but also the herbs sorbet with burnt Italian meringue was something from another world. Well done chef and well done to the front of the house for the service.

Wow wow wow wow! And more wow! And even more wow than ever!

We had a lovely experience at Wilson’s about a month ago. The atmosphere is nice and not too busy, the staff are kind and welcoming, and the food was inventive and mostly very nice. It obviously comes with a high price point, but this is expected for well prepared food using high quality ingredients. Our only criticisms for Wilson’s are that when we went, no drink was included in the price of the tasting menu - usually at other restaurants with tasting menus, at least a glass of wine and/or a hot drink at the end would be included in the price. Had we had this, I think it would’ve felt a little more worth the money. An extra (but not so important) point we noticed, was that when bringing a dish out, our server said it was her favourite on the menu whilst explaining it, and then we heard her say the same kind of line word for word about another dish to the couple sat next to us. Of course I don’t mind all too much but it just made the service feel slightly impersonal and ingenuine. The staff were still lovely though. We would love to come again to try a new seasonal menu!

Could not fault! Some of the dishes really stretched what I thought was possible with food! Great service, great food, great drinks.

Booked by my son for my birthday. We had the taster menu, which was delicious and beautifully presented. The service was excellent and the staff knowledgeable about what they were serving. The menu was extensive and adapted for the vegetarian member of the party. The fresh flavours of the herbs and the tasty produce were all experienced by us, with the different courses.

Absolutely fantastic meal, the staff, food and presentation was amazing and couldn’t recommend this place enough.

Quite sensational. The setting is minimalist (bare walls, simple furnishing) and easygoing, but there is some very serious cooking going on here! My lunch exceeded expectations. I normally dread no-choice menus, but there is always an exception... I can see that the the style of cooking at Wilsons, with complex preparations and a huge number of ingredients and details in each single dish, justify the lack of options (I believe however that within reason they are open to variations to accommodate special requests). From the nibbles, with wonderful sourdough bread, terrine, butter, taramosalata, to the mains (raw lemon-cured scallop, barbecued monkfish, roast mallard duck) to the desserts (a celeriac icecream with honey and truffle, plus an unadvertised canele), we enjoyed a splendid, varied, interesting lunch. (EDIT 11/03/23: on a second visit, I confirm the superb quality of the savoury dishes, but the desserts were not at the same level.) Many techniques were on display, and much more that the main ingredient was in the plate. In spite of the richness, flavours were clear and balanced, revealing great culinary sensitivity and not just a search of the original and the unconventional for their own sake. Service is friendly and informative. The room is too noisy for my taste, yielding more of a pub atmosphere when it fills up, but maybe others will like the buzz.. Interesting wine list (we had a fine Japanese skin-contact white made from Koshu grapes by Chateau Mercian). Prices are absolutely justified in my opinion for the quality of the food (and the quantity too). Also the wine mark-ups are very reasonable compared to the UK average. EDIT 30/09/23 Confirm everything, the savoury dishes are sensational. The only slight relative weakness remains in my opinion in the dessert section.

I've been lucky enough to dine at Wilsons twice in recent months, and on both occasions had an incredible meal, the second being particularly enjoyable as I got to show my parents what a great restaurant we have in our local neighbourhood. The food is great, flavours are well balanced but are intense in the right areas to make them very memorable, really what I enjoy most about doing tasting menus. The service was superb both times, the staff are warm and friendly, attentive but not fussy, an art that is not easy. I highly recommend anyone looking for a very reasonably priced tasting menu to try Wilsons, I don't think you will be disappointed!

It's OK, the food is hugely overpriced for what it is, and the portion sizes are not big enough to actually fill you up, even with the full tasting menu. There are better places in Bristol with more inventive food in their tasting menus. Those in search of fancy tiny food may like this place, those in search of a meal that leaves you satisfied should go elsewhere, I had to get chips afterwards from the excellent fish and chip shop down the road to fill me up.

We had such a lovely lunch. Not formal in terms of atmosphere (a good thing), but with really excellent food that made us feel we'd had a really special event. 7-course tasting menu left us perfectly full in a nice way, just the right amounts to appreciate everything. Food was outstanding and wine was great.

The main issue is value for money. I think the service charge is a bit much for what we had. It was quite loud in the restaurant to hear most of the explanations anyway. The menu was very similar to the last time I came, I thought there would be a bit more variety from the last time because it was seasonal. There was too much foam on the menu.The food was okay but quite flavourless and each course tasted similar to each other. This was my 3rd time coming but my least enjoyable, unfortunately.

Amazing little restaurant hidden away. The food is absolutely outstanding and so are the staff. I highly recommend going for the wine flight. The homemade limoncello is also wonderful.

Excellent Service & Delicious Menu

What a nice little diamond this place is! Excellent price for the taster menu and its delivered with a punch! And I mean that literally the passion that runs through the staff when explaining the wine and the menu is just incredible and it shows on the plate. I love that they grow as much as they can themselves, I've had some of the best tasting pieces of asparagus here that I've ever tasted. I've eaten here too many times now with my friends and family and also wanting to bring people here, it's a place I'm proud to share and confident it'll be consistent so I'm guaranteed a good evening. I'm looking forward to visiting soon with my good friend for his birthday (whom is also a very good customer) We have eaten and tried many places and try to go somewhere new as much as we can and wilsons is always mentioned as "we don't enjoy it here as much as wilsons" when we visit somewhere new. The owner at the food fest in little Stoke the other week showed off his passion and raw love for the place and what he cooks and that's where the staff get it from. I've eaten so many times I cannot comment on each dish as it changes so much too keep up with the seasons and what's the best product at that time available. I honestly have nothing bad to say and highly reccomend it here. Looking forward to the 1st July.

Incredible flavour combinations!

Far too expensive (£206) , very small portions, average / bland food. Unnecessary lengthy explanations about food and wine. Bathroom needs renovating - can kind of get vibe they are going for (I.e low key Bristol edgey restaurant ) but tbf it was more shabby and less sheek if you catch my drift Left having to eat a pasty from Budgens on the way home which was delightful Safe your money - Pasture is cheaper and much much nicer.

Outstanding meal here a few weeks ago. Would highly recommend getting the wine flight as took the meal / experience to another level. I have a couple of dietary requirements and the restaurant were very accommodating of this and adapted dishes for me.

Second visit. Some really lovely cooking, however, two items unpleasant, Guinea fowl was tough and stuffed with what can only be described as a sweet omelette and the meal ended with a choux pastry with a nasty tasting custard. However the other courses were delicious, skilled and imaginative. We were a table of five and I wish I could have given five stars. Maybe next time.

A bit more than a Bistro! Haven't been back since pre-covid. Had a wonderful experience previously and looked forward to returning. Some changes but still outstanding. No more a la carte, now only tasting menus (I believe). Menu, provenance, preparation, presentation, service, and of course taste, all excellent. Interesting selection of mostly organic wines. Loved the creative twists with local produce and the seemingly effortless adaptation for dietary requirements. Bravo!

Fabulous food, friendly helpful efficient service

One of the best meals I have ever had! Came here with a friend for dinner and also had the wine pairing. The food was all exceptional - amazing flavours and seasoned to perfection. We were not sorry we got the wine pairing to go with our meal either… such amazing wines that went perfectly with every dish. And last but not least - the staff were so friendly and knowledgeable. Just an amazing experience! I have recommended to so many people already!

I made a booking for Wilson's over a month in advance as had heard excellent things about the food and it books up well in advance for desirable times. A couple of days before the booking I was called up and bluntly told that the booking was cancelled as the lights in the kitchen weren't working. Things like that happen and that's understandable. However, when asked what they could do to rebook or if there was anything they could offer, they simply said it's up to me and I can rebook online if I want. Of course, no apology was given. The whole interaction gave the impression that the restaurant owners don't feel the need to provide good service as they have become popular enough to not care.

Incredibly creative, delicious and good value food. We went for the short tasting lunchtime menu, which included an appetizer, bread and butter, main course, 2 desserts and a petit four (so not that short) and was more than enough for us. The food was probably the best I've eaten in Bristol, but most impressive was the lovely and engaging service, and informal non intimidating dining experience. Will defo be back. Thanks!

Our meal at Wilsons couldn't have been any better! The service, a smooth humm around the floor, reeling off facts left, right and centre about all that was served. I asked more than my fair share of questions and each time they were answered more than satisfactorily. The knowledge about the food/processes was indeed impressive! The food that came out was utterly devine, expertly explained and beautifully paired with many wines I'd never tried before. Cannot recommend the experience enough!

Fantastic meal yet again! It's been a while so we forgot how good it is here! Even in the coldest least productive months of the year they still deliver an outstanding taster menu of locally sourced and in season food! Well done Wilson's you are showing them all how it's done! Highlight was the herb sorbet meringue but every course was delicious!

Food was truly excellent, the most accomplished meal I've had in Bristol. Ambiance was good, it was very busy but the staff were still very accommodating. All the courses were well thought out and perfectly balanced. My favourites were the venison loin and the mackeral sashimi. To nitpick I'd say the barbecued red mullet was a little under for me and I found the dill and chervil sorbet a little too unusual. In summary: Great food, not cheap, definitely worth a visit!

A ‘fine dining’ experience in a casual atmosphere. Wilson’s is a real food experience! Very creative with the flavours and loved the importance of local/ where the food came from. It was a bit too sloppy for me in terms of textures but if you’re looking for a memorable food experience in Bristol this is definitely a place to visit!

Exceptional food - some of the best I've ever eaten. The food was seasonal, fresh and locally sourced. Clearly, much care was taken over preparing it. They grow much of it locally, and you really appreciate how much they value the ingredients they have. The service was warm and friendly - not excessively formal but very attentive. Could not recommend more highly!

Absolutely fabulous tasting menu ... I had vegan and my son had the usual menu and wine flight. Everything was wonderful and the food so fresh with amazing depth of flavours. There was nothing whatsoever to fault! We'll definitely return and hopefully reasonably soon.

My fiancé and I went for the six course testing menu last night and it was absolutely wonderful. The food was so fresh and prepared to perfection. Loads of fresh fish which I love, and deer. It felt like good value and you don’t have to worry about being overly posh. People are just there to enjoy the food which is how it should be. Would really really recommend.

After a really tough few years with lockdowns and all, my husband and I made a 2022 New Year’s Resolution to have Saturday Lunch here every six weeks for the whole year. We’ve been Wilson’s fans for a number of years and it seemed like a suitably decadent treat since we weren’t doing international travel and the like. I know, tough gig, right?! Facebook is filled with people giving up meat or booze, doing 2000 press ups for a charity, scaling a mountain or something equally worthy. We decided to have a seven course menu with wine flight at arguably Bristol’s most exciting eaterie, 10 times in a year. Thoughts and prayers… Anyhoo. We completed our ‘resolution’ just before Christmas close down. Go us. Throughout the year we saw the seasons, menus and the wine lists (and indeed some staff) change. We felt like we journeyed with them a year and saw dishes evolve and grow and reach perfection, if that’s a relevant concept for a place that just works immensely hard to serve up the freshest, tastiest, local food you may ever eat, using every part of the ingredients possible. One thing that simply never faltered was the quality. Or the service. Or just how hard Jan and the team works, day in day out. I took photos of dishes that bordered on art and delivered flavour that was out of this world. I could probably publish “My Year At Wilson’s” and maybe I will consider that. There were too many dishes amongst the 77 courses I ate over that year to remember or account for them all (in truth I sneaked back without the husband for their weekday special ‘light flight’ a few times - incredible value for money and took friends too)…I suspect Wilson’s may well have served me over 100 plates of food last year - yikes. Highlights were their legendary sour dough served with home cured meats, an exquisite smoked roe dip with chive oil, a raw scallop in a divine burnt cream and split with olive oil. I’ve tasted lobster bisque that’s indecently intense, eaten exquisitely-barbequed red mullet, cod and monkfish accompanied by heavenly delights such as burnt butter hollandaise and eaten desserts that simply don’t make sense: used coffee ground cream with raspberries, celeriac, mixed herb sorbets; that are an almost spiritual experience when eaten. There’s an inventiveness here and it’s special. A commitment to local and making the best possible use of all parts of the ingredients. Much of it is grown by Jan’s wife and harvested that day for use; the rest is sourced through close networks of others equally dedicated to this ethos. You don’t quite get to know the name of your individual scallop when you eat it, but you get my drift. A massive shout out too for the way my husband, a vegetarian, is catered for. New dishes are imagined and they are just as delightful as the main menu dishes. The team work in the smallest of spaces (something of a challenge when it was mid 30s outside) and yet somehow do so with smiles and a finishing flourish: each course is brought to your table and explained. And, despite all of this brilliance, there is no hint of an air or grace. They know they’re good (at least I really hope they do!) so there is no need to flaunt it. If anything, there is a humility and simplicity to having a meal at Wilson’s that allows the food to do the talking. Plans for 2023? Make some at Wilson’s! You won’t regret it. Only, don’t book my table, I’ll be wanting it. ;-)
