This may be one of the best one star experiences we have had, the journey that Stephen takes you is amazing. The ingredients are interesting and some unusual but the way that the are combined give a unique dining experience. The restaurant outside does not give it justice, as the name states it’s the butcher shop, when you enter via the side door you are greeted by Mathew who shows you to the very nice laid tables. There is no wine list but they offer a wine flight that accompanies the meal and a selection of aperitif focused on local producers. Stephen introduced each course with passion. I want to say what we had, so you can also have the same amazing experience, taken pictures of each dish. Would highly recommend this place. And thanks to Stephen, Mathew & Claire for a great night.

Most unbelievable dinning experience i’ve ever had. Food was amazing! Chef talked us through every dish, explaining where it come from, how it was cooked, why and how it should br eaten. Service was laid back and casual which was an interesting touch from what I had experienced before. Very unique, a fantastic evening!

The food was very innovative and exciting and some of the courses were excellent. However, I found the service underwhelming and did not enjoy the lack of written menu. The decor was inadequate and there was no excitement or ambiance. I expected more and came way hungry.

An excellent evening. Steve and Claire were on fine form. Eclectic and sumptuous food with a delightfully fresh air of f*ck you to the haute cuisine establishment. Delicious and well observed wine pairings. We've already asked them when we can come back for more somewhat wonky and fermented treats in the spring. Top notch for those who like something innovative.

Entry is through an anonymous door leading to a dining room with four tables, so 8 -16 covers (8 the night we were there), It's booked up months in advance, doubtless because of the Michelin star. While we settled in my beloved had a Monmouth 'cham0agne'and I had a Welsh gin and tonic. The fizz was the better choice I lost count of whether we had 8 or9 course; they're all prepared in front of the diners. They are tiny portions of often exquisite and unexpected combinations. Dried cod, skin, fermented vegetables, lamb tail were among the ingredients. All were served on unique, mainly handmade made, small pottery dishes. A memorable evening, not least for the price- nearly £500 for two including the wine pairings (with 5 of the dishes). To be honest, I wasn't convinced by most of the wines. It was an interesting experience, but I wouldn't repeat it. I'm probably too old and conservative for it!

I was very excited about our booking as I heard it’s extremely difficult to secure a booking… The next day I reflected on our experience..- The front of house wait staff was lovely.. friendly and helpful.- The food was delicious although the course of fried cod skin was a little oily and really fishy, not for me.- The portion sizes are .. super small ..!!- We opted for the wine that paired with the food courses .. very good wine, but because the portions are so small I ended up quite drunk !!- During the meal one of the kitchen staff passed through the centre of the restaurant carrying napkins and towels .. the second time he walked through he was carrying a box of wine!! I’m ok with this normally, but in this type of restaurant I would have thought he could use the back door!- Did I mention how small the courses are .. tiny.- would I return.. hmmm.. probably not.

We last visited in 2017, and the restaurant has undergone a complete revamp since! There is now an open kitchen out front, so you can see the intricate work that goes into the preparation of each dish - and we were lucky enough to have a front row seat! The food was just as good, if not better than our previous visit. Every mouthful was delicious, but the outstanding desserts in particular 'stole the show' in our view!Great selection of drinks too - we had a G&T and a beer to start, followed by the reasonably priced wine pairing which went really well with the food! The whole experience worked so well - chilled out vibe - great music - attentive but relaxed service - and there was always something going on (as soon as you finished eating you were fascinated by the team preparing the next dish). All in all a fabulous evening - well worth every penny - highly recommended!

We had a fantastic meal at Sosban this week. 10/11 courses (lost count!!!) which were all delicious and often unusual, combining flavours and elements we would never think of. Aside from the delicious food, the setting is fantastic - there are only 3 tables and there is an open kitchen as well as a “plating” area where you can see the fantastic chefs putting the finishing touches on each dish which such care and precision. It’s truly an experience. We also had the wine pairing which was reasonably priced and complemented each course well. The servers were also knowledgable, polite and friendly, and we were also lucky enough to chat briefly to chef Steve which was fascinating to hear about his journey. The passion for food really comes through and the Michelin star is very well deserved.Certainly one for a special occasion - I hope we’ll be back one day!

We were greeted at the door very pleasantly by Tam and taken to our table for 2 at 720pm, for the 730pm sitting. Ollie then came over and asked us if we would like a G&T or beer to start, we opted for G&T which was delicious, pollination I think, served with apple and botanicals, delicious and a great start. This took us through the first 4 or 5 courses before the wine was served, we opted for the matched wine flight which turned out to be a great choice as even though one of the wines was described by Tam as being very acidic (it was) when paired with the beef it matched the flavours to a tee. Each course was described as it was delivered (13 in all) and the wine pairing was also described, along with how the wine complimented to food. Watching the attention to detail as the food is created (I would say Steven is a food artist as well as a chef) its incredible to see how much attention is out into each one of the dishes and the ingredients are locally sourced and top quality. When providing feedback at the end of the evening, Steven explained how much time and effort goes into each dish, we really enjoyed listening to him and it made us realise how dedicated he is to his work. The atmosphere was very relaxed, smart dress code, nice and quiet with soft background music and the ongoing theatre of the dishes being created!

The food here is amazing. Each course was delicious and well presented. The wine list has some top quality wines and plenty of choice. However, what really makes this place for me is the lovely wife of the chef who is also your server. She’s so welcoming and friendly. Sometimes, restaurants with such a reputation can have staff who feel superior to the customer and are stuck up. Definitely not here, we felt so relaxed and had a great time. My wife and I enjoy visiting new restaurants and have been fortunate enough to dine at a number of notable fine dining establishments across the world ranging from some holding 3 Michelin Stars to others that whilst not chasing stars, produce exquisite food and provide outstanding customer focussed service. We heard of Sosban and The Old Butchers Restaurant some time ago and after undertaking some research were intrigued by what we found. They do not have a menu there is no choice. However the 7 course tasting menu changes regularly to include ingredients that the owners find by foraging locally and reflects the season. The ingredients are all locally sourced and fresh from their suppliers. The operation is a family business and run by husband and wife Stephen - chef and Bethan Stephens. The restaurant is extremely small (the night we went there was only space for 14 diners) and is only open on Thursday, Friday and Saturday evenings and Saturday lunchtime. After carrying out the research and read the many reviews, we decided that we should try to book’ only to find that bookings are made online and released in blocks on certain dates. Our experience was that unless you made a booking on the day the dates were released you were unlikely to be able to get a table; we booked virtually 12 months ago but I must say the experience was well worth the wait and the two and a half hour drive to get to the restaurant. The restaurant is located on Menai Bridge High Street and unless you were looking for the restaurant you would pass it without realising it was there. Entry to the restaurant is via a side door (not the original butchers shop entrance) where there is a coat stand to hang coats etc. We were met at 7.00pm when the restaurant opened by Bethan who greeted us with a warm welcome and showed us to our table (we were given the choice of table). We were immediately asked if we would like some water (which was bottled from South Wales and was complimentary). This was followed by a gin and tonic (free poured and not measured but generous measure) before we commenced the culinary journey; what an amazing experience of intense flavours, textures and colours. The portions were small and we often wanted more, however, this was not due to the portion size but because of the unbelievable taste and depth of flavour. The meal was all the more intriguing because we did not know what to expect. There were 7 courses as follows:- Crispy cod crackling, banana with fenugreek and cardoman, roasted peanut and sea blight- Field mushroom cream with reindeer moss and fermented egg yolk- Jerusalem Artichoke, Black truffle, havard cheese, ham powder- Homemade soda bread with homemade butter- Cod cheeks & onion fudge, salted leek & green radish- Lamb loin, lamb tail, charcoal, new potatoes and set lettuce- Crushed raspberry, anise, water mint- Bramley Apple, caramel crumble, buttermilk & cream base, sorrel, celeriac sorbet- Lemon ice cream, dark chocolate, sprinkled with powdered kalamata olivesThe above was complemented by a high quality red Spanish wine chosen from the small drinks menu and recommended to go with the food; wine is available by the glass and Bethan is happy and skilled at providing advice on what would fit with each course. The evenings dining experience was mind blowing and well worth the journey. Amazing innovative dishes artistically presented with displaying Stephens passion and respect for ingredients together with the skills necessary to produce such intense flavours. This is all complemented by Bethan’s relaxed but informative front of house style; wearing a beaming smile and equally visible passion for providing customer satisfaction and enjoyment.I can’t say much more or know how I can be more positive about this restaurant; a small simple restaurant with a team that have the ability to provide some magic to all who enter through their doors. It may not be for everyone and in general terms not cheap (it’s extremely reasonable in fine-dining terms) but is a hidden gem not to be missed in my opinion. My wife and I are eagerly awaiting the next date when the next block of bookings are released and we aim to return as soon as possible.Thank you Stephen and Bethan for providing such an enjoyable meal experience and all the best for continued success, you have discovered a magic formula. Take care and see you soon.

Last time I visited the Old Butchers it was quirky and full of character. It has been refitted to resemble every other grey trendy restaurant in the world, right down to the industrial led lights and tumblers for wine. The trendy round tables were completely hopeless for a party of six. The food remains outstanding, as you would expect for £100 a head but frankly at that price there are other places with great food and more interesting surroundings. A little sad, Ian.

This was our 2nd visit to this marvellous restaurant. My first review three years ago said this............ "The food, oh my the food, we were served six different dishes for our meal and had no idea what each course was going to be. This is a brilliant concept for people who are open to trying any type of food". Well it's fair to say not much has changed except for the small matter of be awarded a Michelin Star. If you are thinking "WE JUST WANT TO GO OUT FOR A NICE MEAL" then go to any of your regular "NICE" meal restaurants ! If you fancy a sensory sensation and would like to be introduced to tastes and combinations that you may never have tried before, but which all taste and look amazing (in our opinion) then this restaurant will fulfil that requirement fully. My only small gripe is that the price had gone up from when we booked and were not made aware of this until being presented with the bill. To finish on a positive note, the wine list is not expensive and the service was excellent.

After waiting a long time trying to get into The Old Butchers Block I finally succeeded and was amazed by the skill of the chef. This is a real culinary experience and those wanting a steak and chips , extensive menu, pinged food don’t bother going. But if you want to taste flavours so cleverly put together, fabulous presentation and an all round one off experience you are unlikely to get outside of London then go! This is not a restaurant you are going to visit even once a month but I would say seasonally if you can afford it or for a special occasion where the quality of the food is important to you , this place fits the bill. After a warm welcome from Bethan you allow yourself to choose some wine and then wait for the tasty morsels conjured up by Stephen. The menu was totally different from my last visit apart from the lovely ice-cream lolly at the end - a mixture of dark chocolate, creamy lemon and smattering of olives. Every dish had a number of ingredients that highlighted the main component - magic was created with lamb, fish, beetroot, fish skin, white chocolate egg with a creamy filling and more. We arrived at 7.00 and left at 11.00 having enjoyed both the understated service from Bethan and the delicious cooking of Stephen. The whole party loved the experience and intend to return.

A lovely evening of wonderful food, well matched and reasonably priced wine and great, friendly and very informative service. It is a small intimate restaurant where dress ranged, comfortably, from jeans to best bib and tucker. The food came one sensational dish after another, with the tasting menu being created by someone who really knew how to build a whole eating experience rather than a string of disjointed choices. The attention to detail, even in the choice of serving plates was fab. This is fine dining with out a hint of stuffiness which spoils so many places. Particular flavours will remain in my memory for a long while and the mulberry smoke was a really nice extra which made us smile. Thank you folks.

The food was out of this world, What an experience, if you haven’t been, you need to experience this once in your life! The restaurant is set in a very comfortable style without being to fussy and pretentious, yet still retains a classy decadence! The highlights were the cod skin with peanut and bannana which set the expectations so high without once being lowered, along with the Lamb rump which was to die for! Thank you once again for what was a wonderful night!

Top class food served in a relaxed pleasantly decorated restaurant by a very friendly & efficient husband & wife team. There’s just the tasting menu which they had very kindly adapted to take account of my wife’s dietary needs. The stand out dishes for us were the lamb & two desserts but the rest were not far behind us and certainly matched other Michelin restaurants we have visited. Oddly the meat course arrived before the fish so you should check beforehand if ordering wine by the glass.

Michelin Star = starchy, fussy weirdness. Right? Wrong, so very very wrong. This tiny little place served us delights bursting with taste and texture in a relaxed informal setting. Just the right amount of music in the background stopped the painful silences that seemed to haunt the halls of fine dining. This was fun. The food was fun. The presentation was fun. For a little town in North Wales yes it does seem pricey but for food that wouldn't be out of place in a major city I say this is an outstanding bargain.

We have eaten here a couple of times and have always been very impressed. The staff are so friendly and knowledgeable about the food they serve and the drinks that are available. It is a very quirky restaurant, intimate and rustic, and quite a remarkable place. Book plenty in advance as this is a very popular place and rightly so, can’t wait to go again.

Had waited many months to visit and were very excited. We were not to be disappointed and the experience exceeded our expectations. The welcome was warm and the service friendly and informative about the different courses. There was a good drinks menu and wines were good values. The food was delicious with intriguing taste combinations. Well with the wait!

We booked some 6 months ago and could only get in on a Thursday night which was fine. As a party of 6 adults with varying tastes there is no chance of satisfying everyone's palate but Sosban somehow satisfied most of our expectations. Bethan was very knowledgeable and attentive, she gave a brief description of each course and was happy to advise on the wine that should accompany the meal. We were 6 happy and content diners, what more can any establishment strive to achieve.

We had an incredible evening enjoying some of the best local produce wales can offer, created into something heaven sent by a very talented Chef and his wonderful wife.... their love and passion for what the do clearly comes through from the standard of service to the standard of every dish served! We have eaten in some of the worlds best restaurants and cannot believe it's taken us this long to visit Sosban! How lucky is north wales to have this amazing restaurant - whether your local or just visiting take time to plan a visit! I promise you will not regret it!

This restaurant was already a firm favourite with us for a special treat - and since their very well-deserved Michelin star you have to plan well in advance to get a table! On our most recent visit in July (which I'd booked since January) the food and service were as excellent as ever. There's nothing stuffy about this dining experience- it's a small restaurant with a cosy informal ambience - and Bethan as the sole waitress and front of house is so calm and serene, the very epitome of service with a smile! The food is always exciting with unexpected but delicious taste combinations & experiences, can't recommend it highly enough. already thinking of booking our next visit

We went for our anniversary and had waited a good 6 months to get in. The restaurant is very small so I can see how it would get booked up easily in advance. The food was delicious and Bethan was very attentive and made sure she explained each course as it came. Wine prices were very reasonable too. The only negative thing I could say is that we were there so long (8pm reservation and finally got into the house at Midnight), that I would book an early table if I went again.

I'm going to keep this very short as I don't want to ruin any element of surprise, that's what the whole experience is about here.Trust me I have been to a lot of Michelin Starred restaurants and I am amazed at the quality of food produced with such a small team, think I saw three people including Bethan who single-handedly ran the front of house. It's clear to see that both Stephen and Bethan love what they have worked so hard to build in Menai Bridge, everything and I mean everything was stunning. Can't wait to go back, thank you very much for a truly fantastic night.

Couldn't comment on the food but their communications are appalling. Originally booked for 4 back in November for my wifes 40th. Two and a half weeks before our guests had to cancel so I emailed to ammend the booking. Three days later I emailed again. I received a reply 7 days from the original telling me I couldn't amend the booking but I could cancel. Following a telephone conversation to try and sort something out I was told that their 'Booking system wouldn't allow it' !! I was gobsmacked by this response, but polietly cancelled the booking. I was told that a cancellation email would be sent out, five days later and I'm still waiting!! I can only comment on the customer service and it is very poor. No attempt was made to accomodate us or to offer an alternative booking. Very dissapointed and will not be re booking or reccomending.

Wow! What an experience. What an privilege to have such an establishment in the Bangor/Menai area which is owned and ran by locals! Each dish was a fantastic blend of tastes. Each cooked to perfection. Some my wife would never have entertained but she ate every plate. Sadly too many dishes to rate each one on here. My favourite??? Can't choose between the lamb, pick cheek, cod or the rhubarb with custard sphere* my wife loved the sour cream mushroom, oats and bacon.* I hate rhubarb as a rule and would never eat custard!Very expensive but worth it. Great food and great service. Will be aiming to book again for a special occasion! **Need to apologise as I accidentally liked a bad review!**

Nothing is ever perfect but this comes pretty close. Service all fell on Bethan who went about her work with pleasant efficiency telling us about every dish and alternating which of the tables in our sitting she served first every course. and despite having the ultimate accolade of a Michelin star, seem genuinely pleased with comments. The place while understated made you feel special, in part by the fact there where only 14 of us in the restaurant 6 in our sitting and 8 in the earlier sitting. The dishes 9 in all varied from the nice to the simply amazing, the fact my wife who disliked something on every course ate and enjoyed every course bar one says a lot. The highlight ................ Rhubarb and Custard like the sweets of old tuned into a grown up dessert delicious to the last scrap of the bowl. Worth a 6 month wait? You bet it is!

Everything about our evening here was simply perfect - from the decor to the front of house Bethan who welcomed us so warmly to the amazingly delicious and interesting menu. We will definitely return and wish the team much success as they deserve it.

We had high expectations of "Sospan" and these were definitely met, even exceeded. Michelin star restaurants can often feel stuffy overbearing and pretentious, not so at Sospan just fantastic food prepared and served by immensely skilled and talented people with an obvious love for their art....

On Saturday 11th March a group of four enjoyed an amazing array of tastes in the understated but exceptional Sosban. The service was delightful with an excellent balance of care and attention and detailed information for each dish. All food was a feast for the eye presented in a wide range of lovely dish ware but as hoped for and delivered the taste of the food was the highlight. Very course was delicious with unusual combination of ingredients which fused to tease and delight. It would be redundant to choose a favourite as each dish hit the spot. We all hope to return although we understand that it could be a long wait but we will definitely make the journey again.

Stunningly informal Michelin starred restaurant.Manage to get a booking 4/12 in advance.Had heard good reports and was not disappointed, the food was stunning , 9-10 dishes of varying size but all intensely flavoured and not a single weak dish. Every course left you wanting more of it , too many to discuss each dish but some stand outs included a crispy chicken skin with intense mushroom purée , salted leaks and grated dried egg yolks that was stunning as well as venison and beetroot with smoked yoghurt. Front of house pleasantly informal and although didn't have matched wines, every wine on the wine list was available as both bottles or single glasses at no extra cost allowing you to try a wide range of wines. The concept of a menu less meal is exciting as you wait in anticipation of the unexpected next course, although does make choosing wines more difficult. Will certainly be returning at the earliest opportunity.

We visited the restaurant again six months after the last visit (and now following the award of a Michelin star) and it was a fabulous experience. The food was excellent, from the Reindeer moss appetiser right through to the rhubarb with licorice. The selection of wines was excellent (we chose the paired wines). Bethan, at the front of house, looked after us so well and we are keen to return. It is a must for anyone who likes to try anything out of the ordinary!

After all the hype we were expecting great things. Unfortunately we had eaten better in the Manchester French which hasn't got a Michelin star!! The service was poor, we were left with empty glasses and without drinks for very long time no periods. The food was presented well yet the moss starter was let down by the dry acrid taste that was left in the back of the throat for the next two courses. Highlights were the beautifully cooked venison but that was also slightly spoilt by the beetroot blanket that covered it which lacked Flavour but was also cloying in texture.Great finish with the lollipop with salted olive but too much custard with the sugar sphere (pinched from Gt British Menu). Nice but definitely not Michelin standard which is a great shame.

We had arrived at our hotel earlier than expected and hoped that we would be able to get a snack or sandwich, but were politely told that food wasn’t served during the day. However we were directed to Blueberries in the town. We had to pay £1 to park the car as this was also where a market was held each Saturday. The menu was really quite extensive including a selection of salads, paninies, salads, ice creams, and Welsh cakes. There was also a selection of teas and coffees.

Going on the strength of other reviews, we booked a table in the dog friendly area of The Crown. Having had and a 2 hour walk beforehand, a well deserved refuelling stop. Quite chilly in that area of the pub. Cheap lunch menu. Specials board more expensive. We had Scampi & fries, small battered cod & chips. Both came with peas. I had much higher expectations and was disappointed in the portion size(5 scampi pieces). Would consider giving it another try sometime, go in the evening and dine in the restaurant area. Pay the more expensive dinner prices, in the hope that the food would not be cooked from frozen and the portion sizes would be satisfying.
