New Wave Ramen - Mackie Mayor in Manchester

Came with high expectations and left rather disappointed. We came on the 18th of March in the evening and as usual goers to the New Wave site on Tib Lane we thought we’d check out the Taiko offerings as they have different styles of ramen compared to the main site. We ordered the miso ramen, karabashi devil ramen and the karaage chicken. The karaage we could tell was sadly over cooked just by the colour of the breading alone. Looking past that, the meat was dry as hell and seasoning wise, we agreed that there simply weren’t any in it. Cannot fault the spicy kewpie mayo though. The ajitama eggs which we ordered two of per bowl were bland and definitely not marinated long enough even if at all. Genuinely, I make better ajitama at home and I am just some basic arse home cook. So this was a great shame. But the cherry on the cake was biting into my last egg only to receive a crunch and a half as there was an eggshell the size of a thumbnail on the underside (Picture included). I accept that things can get overlooked during prep but you would think something like leaving eggshells on the egg in a ramen shop is something you would try to ensure ain’t happening . The miso soup base itself was nice and enjoyable but the toppings were pretty minute. The slice of pork you could eat in 2/3 bites unlike the toppings at the other branch. Overall, a bad experience here at Taiko x New Wave Ramen at Mackie Mayor and in the future I’ll just stick to visiting the site on Tib lane.

I hace to say first time trying expebsive for 2 small pieces of pork a few noodles and not much veg first spoon full was nive but then it was not very warm or nive very salty but not muxh flavour the pork brlly Raman

The restaurant is located inside the Mackie Mayor covered market, a historic food hall on the edge of the city's Northern Quarter. Good, plentiful and distinctive Ramen, with handmade noodles. Pork gyoza recommended as an appetizer or to share.

Great authentic ramen and wonderful service by the team. They even gave my kids a treat for Chinese New Year. The noodles were cooked to perfection!

That is the most delicious bowl of ramen I've EVER had. I ordered the Lamb Tantanmen and it was incredible. The most delicious meal of any kind I've had in a long time. Fresh, well balanced, creamy, a lovely amount of heat. I'm so happy right now!! The perfect nourishing meal on a cold evening. Well done to all the team that make this happen, bravo.

I tried to place an order, but the staff sent me back to my table three times, insisting I use the QR code to order. However, the QR code didn’t clearly indicate their establishment. After wasting 20 minutes running back and forth between my table on the mezzanine and their counter, I was finally told they were no longer taking orders! I ended up ordering from another place instead. The lack of communication and poor organization was extremely frustrating. Avoid if you expect basic service efficiency. This version keeps the key details while making the feedback constructive and impactful.

The spicy vegan ramen here used to be the best! It's still decent but the level of the vegan ramen on offer has lowered noticeably. No marinade or charring on the tofu, no spring onion. No saffron. The noodles are still great with a nice bit of bite. I'm not sure if it's still owned by new wave ramen as there was a different name on some of the signs so maybe new ownership still finding their feet

Wth is goin on here worst ramen i have ever tried really cant compare to Japanese ramen the noodles are hard and sticky😧and the soup cant even cover the whole noodle the meat is dry like grandma i really cant. I had ramen is here before and its nothing like this idk if they change the owner or what i will never coming back here again

Amazing ramen, with veggie options for all their ramen variants. The veggie options are cheaper than the meaty options, which was an unexpected bonus!

Nice Japanese style of Ramen!! 🍜 Special menu of Yuzu flavour of the seasoning inside the ramen and the texture of the noodle is just about right too:)

Sadly unbelievably salty ramen which made me leave most of it. Shame cause the meat and the noddles were good but inedible broth. For 15£ you can get a really excellent one.

Loved getting a couple of bowls of ramen and gyozas here whilst swigging ales and listening to hip hop in the sun! Great little spot.

The reason I am leaving 1 star was that me and my Burmese friends had a really bad experience despite the fact the food was really good. Always supportive of you guys and came to your summer menu launch party, treated badly by your manager which we all felt there were micro aggressions.I made a post about it on my social media. This is the best ramen I have ever eaten in the UK. Both the noodles and the soup are of a very high standard. As long as the quality of the noodles is improved, it will be no different from Japanese ramen. The attitude of striving for progress is very satisfying and I look forward to coming again. Will do better, I highly recommend it

the saltiest miso ramen ever. had over a litre of water with that dish alone, the salty taste was insanely overwhelming and i couldn't finish it.

I had shoyu ramen that was amazing! You can get best Japanese ramen in Manchester here. Stuff is really kind. I had great service experience yesterday. Big thank you and I will back soon definitely:)! Ramen always go well with beer! Can’t wait to comeback for night out!

Paitan ramen was bussin fr, nice rich broth kinda weird aftertaste. Noodles were nice and the egg was boiled well.

i think im in losers queue, got the lamb tantanmen (spicy lamb), ngl these reviews make it more than what it is, hardly any lamb, the broth was so horrible (low elo) and it ruined the whole dish, i could hardly taste anything else due to the taste of the broth, it felt almost pasty, it lacked flavour but was kind of thick and overly salty, it was just bad, tried my best to describe it. but it was just bad. friend said he liked og paitan

This is our 2nd time here and it is amazing!! The most amazing my ramen we have ever had! Also tried the spicy chicken buns which also did not disappoint.

A modern place with smiling staff. Lamb tantanmen - something heavenly! Distinctive taste, large portion, makes you want to come back more often. The best ramen I've ever had in the city!

The food is fabulous, delicious Ramen broth choices & toppings - we loved the creamy white chicken broth soup & the eggs are incredible, cooked perfectly. The staff are great, really friendly & happy to accommodate, easy to approach & ask questions about the menu. The location is very cool, a food market with old wood everywhere & the coziest feel of any food market I've been to in the world. Highly recommended

I had Tokyo shoyu ramen, basically it's ramen in very rich chicken broth, with 2 pieces of barbecue pork and a marinated egg. Taste was alright, but the soup was very salty and greasy. The ingredients were not much therefore seemed a bit overpriced.

Lovely setting with a variety of foods to choose from. The ramen and Gyozas are delicious. Situated for all-families, large groups etc

LACKING GOOD VEGAN OPTIONS!! It’s 2023 and their vegan options are lacking the much needed ommph! Lovely broth and noodles, but for £13 I got served two pieces of tofu 🤷‍♂️ and little to no veggies or mock meat. The future is vegan but these guys are stuck in the past. #sad

Ramen broth is actually really good, it's not very thick texture wise BUT the flavour is strong enough so it isn't bland at all like some other joints. They also give you a whole onsen egg, not just half. Would be nice if there is an extra piece of pork char siu, but otherwise can't fault the taste. Chicken karage is worth the price, good portions with quite a few pieces and not over fried so that it's not dried out. They give you a generous spread of mayo too to go. Something that some ramen spots in London charge extra for, so I'm really grateful. Staffs are very nice. When I asked for tap water, after telling me that there is a water dispenser a the corner. One of the guys who works at the place (who seemed like the manager) brought a bottle of tap water over from idk where. Really thoughtful as I was by myself so don't want to leave my stuff behind just to get water. The place is quite a cosy food hall, not super noisy or crowded at 9pm on a Wednesday night. The food vendors are all on the ground floor only but you can sit upstairs as well on the first floor. Have about 7-8 joints so possible to try out a few of them at one go without going around and feeling like you can't make up your mind.

Excellent Ramen experience in UK and from my experience, they are better than many Ramen shop in London as well! £14 for the Tokyo ramen plus £2 for extra noodle. Even big eater will be happy!

Ramen was delicious, I opted for the vegan spicy ramen with tofu. My only request would be some extra vegetables in the ramen as just the noodles, tofu and spring onions were not super filling!

Went the other day someone I work with over hyped it ramen was salty , the noodles was undercooked and the waitress / I think manager was rude when I didn’t like the cucumber salad and kept hovering wasn’t worth the money

Literally one of the best ramen stops of my life. Friendly staff, menu has all the basics. Got given a lil fried chicken freebie and my ramen was so tasty and fresh and flavourful. Only wish I hadn't guzzled it down so fast so I could enjoy it a bit longer

Reviewing again. The best in the UK maybe. Although I haven't had everywhere. Broth has gotten a lot better in the shoyu. Worth every penny and it's not that expensive. Adding new photo of their tib lane. Broth is even better

Blown away! I tried just about. Not a single disappointment. Wow!

We ate at their new place on Tib St… I’ll start with the good bits… the atmosphere was nice, pretty big place compared to the Mackie Mayor set up but that’s about the only positive of the evening. We sat at the counter top where you can watch the chefs cooking… I’m not sure if they’re just not used to people watching them, but they looked confused a lot of the time, weren’t washing their hands when touching raw meat etc, were wiping their sweaty brows and then immediately touching food again, it was pretty bad to watch. Our starter took 45 mins to come and then when it arrived it wasn’t the right one… It seems it was written down incorrectly by our waitress, so when we asked them to switch it, we waited another 25 mins for a poorly cooked, unseasoned piece of grilled chicken that was drenched in soy sauce. We also watched the chef flatten the piece of chicken with the palm of his unwashed, bare hand onto the grill before opting to used the bottom of another baking tray to flatten it once it was too hot to touch. Of course, said baking tray was then just placed on top of other things without being washed and used for another dish later on. When we finally got our noodles, I had the special which was really salty, not well seasoned again, and the meat in it was like a poorly cooked, frozen piece of plain chicken, an undercooked meatball and a fatty slice of pork. It was horrendous… the ramen were stuck together, it wasn’t tasty at all. Other tables were waiting with no food for over an hour, no explanation, no apology or complementary drink or something in the meantime to soften the blow. Eventually I think one of the chefs could see we were hugely underwhelmed with the dishes and made a passing comment about the ticket machine not working properly that night which was the issue with the food taking so long. Our server had abandoned us by now so we had to ask someone else for the bill, which still had the incorrect starter on it alongside the one we ordered… we had to ask them to remove it and then felt immediately guilty for even mentioning it. We couldn’t get out of there soon enough and safe to say, we won’t be visiting again… if you want decent ramen, Tokyo Ramen is still the gaff of choice for us!

Disappointing and definitely not like in Tokyo! The pork was quiet tough, the broth was rich but very sickly . The portion is quite small as it’s not the cheapest. We visited the new location in Manchester at Tib Lane. The noodles itself were nice and firm but the place is lacking a vibe. Overpriced but willing to try the evening menu in the future. Ps. Your staff should be more knowledgeable about the evening menu they did not know much.

Viisited their brand new tib lane location. Is the ramen good: Yes, up there with top ones in Manchester. Is it £16 good: Maybe Is broth good: a bit too salty atm, some tweaks needed. Service Charge: bit odd for charging 10% for single bowl service at the bar seats for 1 person. Won't go there regularly as still better value options in town but having an occasional bowl from here won't hurt.

This place never let me down, I have eaten here quite a bit but the taste and the atmosphere is one of a kind, and now I have a dog there is no problem for Millie to come and chill with us here 😊, I love my ramen and I make sure I go to my favourite place when I want to eat it, and I recommend this place for the best ramen 😊

It tastes better than expected. There are no Asian faces in the store, but the noodles are chewy and the fried chicken is also good.

Vegan ramen was absolutely delicious. I got the spicy tantan and it definitely brought the heat. The restaurant is inside a big coop food court so just find a table and order using the QR code and they will just bring it over!

The ramen was a bit disappointing. The broth was too greasy and salty and the char siu (pork slices) were too fat. It's a bit pricey for such quality and portion. The deep fried chicken was good though.

Everything was perfect came in there not knowing what I wanted and I asked what he would recommend and he gave me the a lovely spicy creamy bowl. The vibe it gave was very rustic yet jolly I didn't feel like I had to be on edge. Overall 10/10.

Such a mediocre ramen for the price, pork belly was cold and ramen was undercooked. Gyozas and yuzu highballs were good but honestly not worth the price for the ramen, you can get a much better one for similar price in Shoyu

Authentic taste of Japan ! Honestly if this shop is in Japan, it will be one of the best ramen place, it is really that good !

Have been craving ramen for a long time, decided to give them a try and did not regret. Went at 11am, after my first bowl, it was so good that I decided to go back for a second bowl at 2pm again on the same day! Noodles were cooked to perfection, just "al dente" enough to have a bite to it. Perfectly done egg, soft, gooey and really flavourful. Charsiu was tender and juicy, and you can taste just a hint of the marinade. Spicy shoyu broth is on the slightly saltier side compared to the OG. Its fragrant, with a slight kick of spice. OG broth is creamy, but does not leave an "oily" feel to your mouth. Both bowls were 10/10 and I would get the OG again and again because of personal preference.

Had an orig pattan ramen and the broth is tasty and unbelievably authentic :)))))))

Best ramen! We go there for our ramen fix at least once a month. After trying many other ramen places, the Lamb Tantanmen here is still our favorite. It is spicy, tasty, and full of rich flavor.

What a hidden gem in the food court and probably the BEST ramen in the UK! Very rich soup which was very Japanese authentic (not like the chain stores’ very watery). Pork was tender and delicious. We ordered the tsukemen too and the noodles were different from those served in soup which showed their detail minded.

I’ve had a lot of ramen in my time. But no joke, this is by far the best I’ve had. The cooks are friendly and genuinely have a passion for their craft. They spent time explaining their broth cooking process to me (takes 2 whole days). We need more wholesome and talented places like this in the world! If you are in Manchester, I would recommend going out of your way to visit this place, it is fantastic!

I thought I'd try this place as I was craving some decent ramen after being disappointed at several other ramen restaurants in Manchester. Staff are friendly and helpful, but I initially felt the price was quite expensive for a bowl of ramen, however, after tasting it, I have to say it's completely worth it... I've been twice so far and initially ordered the Lamb Tantanmen on my first visit. When it came, it looked nicely presented in the bowl and smelt delicious. The taste however... was out of this world. It was absolutely stunningly flavoursome. There wasn't much lamb if I'm honest, but what there was, had so much flavour and worked so well with that thick, spicy broth. Every element of that dish left me wanting more. It was waves and waves of neverending flavour. The noodles themselves and egg was cooked to perfection. It was absolutely heavenly, and quite possibly one of, if not the best bowl of noodles I've ever eaten. This includes award winning ramen restaurants I've eaten at across the UK, Hong Kong, and dare I say it, even Japan. I actually wanted to hate it due to the price being £16.50 for a bowl, but I simply couldn't. It was too good, too delicious. I had to go back after this first visit. My second visit I thought I'd order the Yuzu Shio Ramen. It's one of my all time favourites but not everywhere does it, let alone do it well. When it came, the broth was much clearer than the Tantanmen previously, as Yuzu Shio usually is. It looked like a simple and light tasting ramen... But once I tucked in, the amount of flavour packed into that bowl was immense! Right away I was hit with a gingery and super flavoursome chicken broth. The Chashu was succulent and juicy, and that citrus from the Yuzu added that refreshing twist and another dimension to the fragrant chicken and ginger flavour of the broth. The egg again, was also perfect. Just like the first time, it was mouth-wateringly flavoured with the soy sauce, with a seductive sweetness and perfectly done. The noodles had a perfect bite to them, and picked up much of the broth with each and every slurp. I was, and still am genuinely, and thoroughly impressed with this place. If it wasn't so pricey, I'd honestly eat here every single day. "Delicious" is an understatement here, "perfection" is hard to describe in words. All I can say is, if you're a devoted ramen lover, you have to get down to this place to experience a bowl of ramen heaven. I honestly don't know how they do it, but I'll say it once again...it's tastier than even award winning Ramen restaurants I've eaten at in the UK, Hong Kong and even Japan (sorry!). Thanks for the amazing eating experience. I'll be sure to come back to try the rest of the menu items, once I recoup my severely depleted finances of late, from the overbuying of vintage whisky! 🤣🙏

The noodles are great (not too soft). The broth is very strong which is very nice as well. 2 pieces of pork belly is okay. The ramen is a bit pricy. But if you really want to have ramen, I think you won 't be too disappointed. Tonkotsu Ramen The noodles are moderately soft. I personally like their noodles. They have a lot of soul. They don’t feel like noodles made by a machine. The chicken fat taste of the soup is quite obvious, and it's a bit salty, but by British standards, it's excellent. It's obvious that they boil it, not use powdered buns, which is very careful. Barbecue pork It's the unseasoned kind. It's quite soft but not very bright. I only gave two slices. Soft-boiled eggs Give it a whole one, it’s just ordinary Overall, I think it's a pretty good ramen by British standards, but the price is on the high side at 15GBP. If you really want to eat ramen, you can come here. It's the kind of ramen that you won't get angry after eating, but it's not the kind that you won't forget.

Shoyu ramen I tried before was great, would give it 5 stars. Today I tried the tofu tantanmen and it was massively disappointing I couldn't finish it. Expected better as it is premium price. Tofu was lovely but broth tasted like tahini mixed with a bottle of chilli oil and not much else :(

A somewhat hidden gem with perhaps the best Ramen I've had in the north. I wish it was cheaper as it's so easy to get addicted to it.

Quite pricey considering the quality, it’s not traditional Japanese Ramen taste, far from that. There are some other better Ramen shop with similar or lower price. The only good in the Ramen bowl is the ramen only, not the soup nor pork slice

Enjoyed the Ramen. Plus the sorbet at the end was exquisite. Will be back in Manchester in 3 weeks definitely going back for more.

My wife and me (she’s Japanese) ate here (Sunday lunchtime) and she said it’s the best Ramen she’s had outside of Japan. We came up from London for the day and it was better than anywhere we’ve found there. Thanks!

Just spent 2 months living in Japan and the Ramen here would have been a 8 out of 10 even in Japan. I can’t praise higher than that for Japanese food in the U.K. very subtle and sophisticated taste. Staff also excellent and friendly.

Very delicious. I had the OG Paitan dish. The service was really nice and very fast. A server came out just after I ordered to make sure my dietary requirements I added was acknowledged and offered a swap of ingredient to accommodate it. All my friends loved the food and can’t wait to come back.

Absolutely amazing. One of the best Ramens in town imo. I had the OG Paitan and I like it better than Shoryu and Tokyo Ramen.

Taste actually very ordinary. Kitchen staff rub his nose with hands when sneezing. Friendly staff at the till.

With Asian taste, this Ramen is above average and out of expectation. I am strongly recommend the OGIPAITAN Ramen. The the soup is creamy and the you can taste real chicken. When you drink it, you will not fall thirsty. I like their spring onion which is must match with chicken in Asian dishing. The hardness of the noodle is freaky well done. Absolutely suitable. It can absorb the soup with appropriate chewy texture to serve my requirement. The only strange point is the spicy oil. I is not that spicy that would turn the whole Ramen red but a refreshmen. However, I more prefer ginger or garlic as refreshment which would match the chickentaste more. This is a must if you are Ramen lover in man city.

A star is deducted for misleading photo on their social media, otherwise fine quality ramen as in GB standard. I've ordered a Truffle Shoyu ramen which I'm quite happy with it, however my friends who have ordered the veggie miso ramen did claim that the broth is too salty.
