Sandwiches are made in front of you. All the fresh meat and salad are presented behind a refridgerated glass cabinet. So you know what exactly is going into your sandwich. Hot sandwiches are cooked and prepared in a back room. Cooked to your personal preference. Let the staff know how you like it and they will be happy to accommodate.
