What can we say? Let’s start with the food: Such subtle flavours, so much so we were lingering over every spoon/fork/finger full trying to identify the exceptional ingredients on display. The presentation was first class - you eat with your eyes and boy did we! The service: From start to finish we were treated to great service. Gareth certainly knows his wines and his recommendations were spot on. We were delightfully surprised by the Welsh fortified wine - a wonderful compliment to the additional cheese course that we ordered. Overall a superb dining experience that we would happily repeat.

4.8 A sensational evening in all respects. The food was superb, the service warm and knowledgeable, the atmosphere vibrant, the wine pairings well chosen, what more could you want from a meal. The initial canapés all had well defined flavours, the Welsh wagyu was our favourite with a delicious creamy taste and texture. Every course was well balanced and full of flavour. We took the additional cheese board and were so pleased that we did as the cheeses offered were not only excellent but were all new to us showing how much the cheese offerings from Wales have developed and improved. The only slight negative, and it is slight, we don’t like beer so a pairing of beer with the bread course wasn’t for us although I understood the concept of matching the grains. Thoroughly enjoyable evening we will definitely return on our next visit.

We went for my wife’s birthday and we will definitely visit again. Located in beautiful Conwy, the restaurant offers a seasonal taste of Wales with their delicious and creative take on traditional dishes and ingredients. Far from pretentious and very attentive to details, the wine pairing was well selected with a good variety. The staff were fantastic and made us feel comfortable throughout.

There’s going out to dinner and then there’s having a dinning experience and when you step through the unique doors of the Jackdaw, the latter is what you can expect. I can confidently say that this was the best food out that I’ve ever had! I booked a table for my wedding anniversary and we were warmly welcomed with a personalised, hand written card from Nick and all the staff. The exceptional service, immediately puts you at ease with their friendly demeanour. Their enjoyment, knowledge and passion for what they do is infectious and it’s easy to see why they are so content. When you come to the Jackdaw, you are experiencing an artist at work in the hands of Nick Rudge. Each dish has a blend of flavours so lovingly and cleverly balanced that it takes you on a journey of simple decadence. You can taste the Welsh history in these plates, all given a twist of innovation as a nod to the future. This sense of perfect balancing was seamlessly enacted throughout the menu where each dish connected its story to the next. Particular highlights would have to be the enigmatic summer sip, the fresh and surprising pigeon jelly moose, Bread of Heaven and, of course, Lamb cooked three ways. We were also more than pleasantly surprised by our opening cocktail drink, Diodgriafel, a wonderful blend of foraged berries and Gin. A must have if you go! A complete gem of a place for all the right reasons. Surely, a Michelin star is soon to follow.

I came here while visiting the lovely town of Conwy knowing very little but seeing a few raving reviews. I was very impressed, and would absolutely come back next time I'm in the area. First, the service was above and beyond. Multiple times the staff took a moment to have a chat with us about something which felt very genuine and made the experience feel more like a family meal and less like stuffy fine dining, which I enjoyed. Felt on point with what they are going for. Second, the food was incredible. There was an obvious theme of grain throughout most dishes and it was a nice journey of the senses. My favorite dish was the lamb skewer, while my wife enjoyed the scallop. Neither of us had a dish we didn't find amazing and the whole meal was phenomenal. It was perfectly wrapped up with some small dessert bites, and I left feeling quite full which is often not the case for meals like this. Overall, I would highly recommend The Jackdaw. It has so far been the highlight of my 3-week trip to the UK.

When the first course came out, I envisioned us calling in the chippy on the way home! How wrong I was! Each small course was an explosion of flavours. By the 9th course I was so full I couldn't finish. The staff were amazing, efficient and friendly. One waiter, sorry forgot his name, was an expert on wines and when explained what sort of wine we liked brought us a perfect bottle. The evening, although a pricey treat, was fabulous. Only one small negative comment would be the room. Although tables were dressed beautifully the room lacked atmosphere. Would definitely return with friends and family.

Superb meal by chef Nick Rudge who we saw on Great British Menu 2024. Tasting menu only these days. We went on a Wednesday (if I recall correctly) and it was only the chef and the manager there working 3 tables. Apparently they limit the number of heads on weekdays. The entrance is quite subtle, a single street level doorway and you climb some stairs to another imposing door, we were almost afraid to enter. But we were greeted warmly by the manager who had plenty of time to chat. The food was all excellent, easily Michelin standard, one of the top two meals we had on a foodies tour of Scotland and Wales. The biggest revelation was the Bread of Heaven, which was made with traditional grains, including an innovative porridge like dish and spreads also infused with fermented grains (if I recall). Bread is normally a side, or a filler, but Jackdaw truly elevated it to a stand alone dish. We didn't try the wine pairing. I read a review from just a few days earlier that clearly had the same menu, and they were unhappy. I don't know why. I found every dish enjoyable and innovative, and thought it was good value for an exquisite meal and great service given it was quiet.

A magnificent experience. Arrived at the Jackdaw for a suprise birthday dinner and had an incredible evening. The restaurant is tastefully decorated, with a relaxing atmosphere. We both had the 12 course tasting menu (it changes with the seasons), they're very accommodating of differing dietary requirements as my wife had the pescatarian version. The food is exquisite, ingredients sourced locally and explained to you as you receive each dish.I opted for the wine pairings, which was a good decision and I can recommend it to anyone who decides to dine here. The parings were on point, complementing the food perfectly, and the verbal tasting notes given were accurate and informative. The wine selection was eclectic, and went outside your standard wine list in terms of region choice and producer/grape varieties. The service was perfect, both attentive and friendly, as well as truly knowing about the food that's being served. The whole experience lasted about 3 and a half hours - immersive and well crafted. I'd highly recommend dining here.

Was difficult to balance the Conwy of my childhood holidays, where chips and cream-cakes were in delicious abundance, with the fine dining experience promised by The Jackdaw. But any anxiety that it couldn't live up to expectations were completely forgotten as soon as our excellent host guided us to our table. Sadly his name is lost to me, but his passion, consideration, and breadth of knowledge were worthy of mention here even before we get to the incredible meal he provided us. And what a meal! Nugget is so rarely a pleasant word but the lamb nugget (part of a trio of snacks served first) may just be the greatest single mouthful of food I've ever had. The menu moves through unique interpretations of traditional dishes; Chicken liver parfait and toast, leek and potato soup, salmon, lamb... each course familiar but reimagined, each finely tuned, dressed and accompanied to showboat their strengths, to bring out their very best. The paired wines all really did accentuate the courses they arrived with, the service was impeccable, everything was so perfectly considered and delivered. The showstopping dessert, inspired by the local landscape, was the perfect end to a perfect night. Absolutely no idea how one makes slate mouthwatering, but The Jackdaw manages it. I've been fortunate enough to dine in some of the UK's finest restaurants, and The Jackdaw can stand easily and proudly among them. Conwy has always been a truly special town worthy of a visit, but The Jackdaw ensures that I'll always be looking for an excuse to get back as soon as possible.

Standing next to the discreet Jackdaw logo at the foot of the dungeon gate with its heavily padlocked iron bars cowering from the torrential Welsh rain had somehow peaked our fine dining expectation. We were warmly invited upstairs into a castle like banqueting hall and introduced to the tasting menu. It seemed we were waiting for other guests to arrive as the drinks order was slow. Biding time we noticed a bookcase full of top restaurants, many of which we had visited. Not sure whether the chef had been swotting or whether he was setting the scene, either way Blumenthals Fat duck was at the bottom and Noma proudly sat at the top of the pile, the Chef clearly a good judge of fine dining. After a strenuous walk earlier in the day we were famished, three amuse bouche arrived to take the edge off, but an hour later we were still waiting the main event as we realised we were part of a school dinner conveyor belt system with each table delivered its food in order. Wine was poured, unusually in bulk at the bar, in small measures, then delivered to each table with the waiter individually issuing the same well rehearsed monologue. Finally the first course, a tiny chicken parfait in a langoustine sauce which was tasty. We wondered how exciting the next course of leek and potato could be, but it was suprisingly full of flavour with its salty background offset by a sweet wine, although my wife would have prefered a crisp white and certainly a splash more. Salmon followed with a really unusual mushroom tasting white wine which went well with the fish but impossible to drink on its own. We wondered were the obligatory home made bread was, before it arrived four courses in with a strange collection of meat and three veg in the form of four dice like cubes. The lamb apparently cooked for 17 hours still offered some resistance and the whole course was somewhat out of place on the menu and more akin to school dinners. The main course of Welsh salt duck was tasty enough but unlike the previous courses which were piping hot this one wasnt, perhaps juggling 24 larger plates at the same time was a challenge. Finally, two dessert courses with the Blaenau Slate dish clearly the Chefs pride and joy demonstrating his North Wales heritage. Little care had been paid to the coffees which were served in small bowls rather than a cup rendering them difficult to drink, the espresso was just a black coffee and no petit fours. To cap the school night we were encouraged to form an orderly queue to pay the bill, I was wondering if we would get homework. Overall we marked Jackdaw 7 for flavour, 3 for portion size and 2 for delivery, must try harder, see me.

The best meal and experience from a restaurant I've had in my life. I've dined in a lot of places around the globe and never did I think that a small restaurant in Conwy would give me the best meal I've had in my life. My wife booked this place for my birthday and the first thing that I was provided when I took my seat was a birthday card from the entire restaurant team. The small thoughtful gift from such friendly staff was so sweet to me that I still have it to this day! An experience I'll never forget. Regarding the food, in short, it was exquisite. Everything that we ordered simply tasted divine. I've dined in London, NYC, Kuala Lumpur, and I still rank The Jackdaw at the top. I couldn't say anything bad about the food. Nothing was left afterwards. One of the best selling points of this place is that the menu lists by how close the ingredients/items are to the restaurant. So the first things that you're seeing are locally sourced products. An excellent way of ensuring what you're getting helps local providers. If I'm ever in North Wales again, I'm going to purposely make sure I can come here again. To the crew of The Jackdaw. Thank you so much.

The wine pairing option just added to the overall excellent service and experience. Including some Welsh wine. In fact much of the menu featured locally sourced ingredients. A great way to celebrate our anniversary.

An excellent restaurant. We had our final night of our holiday here and it was a great way to end a stay. The food was delicious; my favourite was the Lamb Cawl which produced four tiny cubes of utter delight to savour before the Salt Marsh Lamb main, but the highlight is probably the Blaenau Slate pudding. Delicious and a great tribute to the local slate mines. All original, all locally sourced, all perfectly cooked. This place is a little hard to find but well worth the search. The service was excellent and the atmosphere was that pleasant sweet-spot between too busy and too quiet. If you're looking for a special meal, this is the place.

Currently the best fine dining experience in North Wales (and well beyond). Excellent tasting and a la carte menus with good local wine pairings. Nothing is perfect (though this is very close), and feedback is a gift so based on 3 visits, I think the chef over indexes on fennel, and one of the junior servers should enunciate better as they describe the at times complex and interesting menu; if it requires detailed explanation then there is no excuse for mumbling. Maître d' is a joy. This is a gem in the regional gastronomic landscape. Hats off to the team in making a sumptuous menu with such reverence for the fine local produce.

A hidden gem in Conwy. The service was excellent. Staff were attentive and knowledgeable but not intrusive. The food was sensational. The gooseberry dessert was by far the best that any of our party of four have ever enjoyed. The set menu lasted for approximately three hours, but it went by pretty quickly. My one gripe would be that dishes were delayed until all guests had arrived (understandably so). Setting a firm start time 30 minutes after the booking time would be appreciated! I would highly recommend The Jackdaw and will return when we're in the area again.

So disappointed as have been here twice before and the meal was amazing. Arrived on time and was told one of the starters and mains were not available (8pm), out of a choice of 4. We were then subsequently told another main course was not available which left only the vegetarian and a game dish. First time I've given 1 star and so disappointed to do this, but feel people need to be aware of the lack of pre-planning at this restaurant.

Dinner at The Jackdaw was a most wonderful and memorable experience. Given the good things I have to say, I will say right now that this is NOT a paid review - it was simply a stunningly good experience that I can't recommend highly enough. Having had the privilege and pleasure to have dined all over the world in exquisite and renowned restaurants myself, I can confidently say that The Jackdaw is easily in the (equally rated) Top 3 for me. Hidden away up a small staircase of a lovely old building in Conwy, the entire atmosphere of the The Jackdaw already highlights from the beginning that this is a quite "private" space where you will be part of something special and let in on some culinary secrets. It is truly fine dining without being pretentious in the slightest. The staff live and breathe hospitality. Warm and welcoming as well as highly knowledgeable about the drinks and dishes, we were superbly well looked after. Food intolerance were taken care of in a very reassuring way, and all dishes were adjusted without us having to ask again or worry. The tasting menu we enjoyed was highly creative and full of uncommon yet perfectly balanced flavour combinations. Pairings with the wines that accompanied the dishes were also very well thought through and spot on. Even if you are not necessarily after fine dining per se but are open to dishes cooked differently to the "usual" (e.g. sous vide meat or sushi style fish) then you are in for an absolute treat at The Jackdaw. Given that they get fully booked up to a month in advance (yes, they are THAT good) make sure to plan in a visit if you head to Conwy. I can't wait to go again.

An exceptional and creative tasting menu in a lovely setting. Truly one of the best fine dining experiences ever for me, anywhere in the world, and for beyond reasonable prices. Perfect balance with simple and locally sourced ingredients and flashes of genius in making the dishes come alive and tell a story, with nods to Welsh classics. Very well chosen wine to accompany. We had the 6 course tasting menu. I could eat the bread of heaven, homemade butter and leek and potato soup by the bucket load. I don't know how to describe the taste of the butter it had an almost cheesy taste in assume that was the intention anyway it was awesome. The salmon was ok just not my cup of tea I guess. The next course deer with aronia berries, I made sure to get a mouthful of everything on the plate and it was perfect like the taste of the forest! 2nd only to bread of heaven!! Then we had Bardsey apple which was the pre desert definitely a palette cleanser! I subsequently learned more about this incredibly rare apple from Bardsey Island. The final dish was a smoked meringue with rhubarb and caramelised pistachio an ode the slate mines. Unfortunately one of the pistachios was too caramelised and I lost part of a filling trying to bite down on it. I didn't mention it to the waiter because I didn't want to make a fuss but I do think that particular pistachio was a hazard. The head waiter or maitre d (maybe that's what they are called in these posh restaurants) was cool, I loved the intense scientific descriptions of each dish and was listening to his incredibly detailed analysis of the different wines and how they paired with each dish. Overall good place, stunning bread of heaven just watch them pistachios.

For a complete dining experience as opposed to a nice meal look no further. We had the pleasure of celebrating our birthdays at the Jackdaw recently and came away feeling truly spoiled. The food is top notch and the ambience was just right for a relatively small restaurant. What set it apart from the start was the level of enthusiasm from the team. For every selection we made from the menu (and the extensive wine list!), we were provided with so much detail of what went into the preparation. Nothing was too much trouble and we were given time to relax and simply soak up the experience. We will definitely return next time we’re in the area

Very cute establishment, great services. It reminded us as a speak easy restaurant as there were no signage of the restaurant from street level. Loved the decor of the restaurant and large windows. The food was excellent. Our favourites were the leek & potato and fennel sauce for salmon. The sourdough soda bread was amazing as well, I think i had 2 of those on my own. Highly recommended!

The menu, the ingredients, the cooking, the seasoning and the service is (in my view) the best you will get for many miles (or kilometres) and I cannot recommend it highly enough. A perfect venue but perhaps a best kept secret too.

The brilliantly hosted seven course tasting menu, beautifully themed and focused on local produce, was set in a relaxed and informal room. Gareth's fantastic knowledge and clear passion for his craft put us perfectly at ease. Every dish and accompanying wine was explained and relevance highlighted in a friendly and informative manner. The dishes themselves were prepared and delivered with obvious skill and thoughtful precision. With a knowing nod to his mentor Heston Blumenthal, Nick Rudge's quality of cooking is something you will rarely find outside of well know highly acclaimed establishments (which, in time I'm sure this will become!) At £70 for seven outstanding courses the value for money is exceptional too. Can't wait to return.

The booking process was easy and I received a call a few days before from the restaurant to confirm it. The table was reserved for 19.00hrs and we arrived at 18.55hrs to find a metal gate at the entrance chained shut which was rather off-putting. A member of staff opened the gate at 19.00hrs and explained that they chain it shut to prevent people arriving early and just wandering upstairs into the restaurant. This is not quite what I would expect from a fine dining restaurant. We were greeted with enthusiasm and seated at our table. We had the chef's taster menu which is the only thing served during the week and chose the wine tasting to match. In short summary: the food was absolutely delicious and probably the best I've tasted in North Wales during the 50+ years I've been visiting the region. However the property itself, the decor, background music and general ambiance let the experience down. The dining tables are wobbly and round shaped which is not pleasant when dining with two people (most of the tables were couples) and the legs obstruct the seating. The background music was not all suited to a restaurant, let alone a fine dining one. The lighting is awful and does not create a cozy or in any way refined ambiance and the general decor is bland and uninspiring. The dining room itself is pretty awful and dull and the whole location is substandard. The staff were all very pleasant but their inexperienced showed. The Maitre D' was very enthusiastic, professional and efficient but a little over powering at times. In conclusion, we had a fabulous dinner so well-deserved compliments to the kitchen but in my opinion the restaurant needs to find a new and more suitable location and employ an interior designer to create the right ambiance. Given time and under the right guidance I'm sure all the staff will raise their game to the correct level. Will we return? Most likely!

Had the most amazing visit to the Jackdaw for a birthday. The staff were very attentive and we were made to feel so welcomed, they even had a birthday card written for the birthday guest! We went on an A la Carte menu day. The food was incredible - the velouté on the mussels starter was so tasty. Scallops were light and fragrant. The beef main was cooked absolutely perfectly. Vegetable sides were amazing, we were all shocked that carrots, wilted greens and potatoes could taste like that! To die for. Big smiles all round! We will all definitely be coming back again and can’t wait to try the taste menu 😊

I can only comment on the tasting menu with the matched wines - and my comment is, fantastic. Every mouthful was sheer delight. Don't go if what you want is a hearty bistro meal - there are other places in Conwy for that. But if what you want is a full sensory experience, superb service, creativity, local produce used to it's absolute potential, and a real sense of love for the local area and Welsh heritage, this is the place to go. It's expensive for the area, but not for what it is. Conwy has many reasonably-priced reasonable restaurants. Jackdaw takes it up a two or three levels, which is what the town really needs.

I’d been recommended to this new restaurant by a chef so I was expecting something special or at the very least approaching fine dining. Lovely, cosy restaurant with great staff and service, let down by the food. Rubbery scallops, and a sirloin steak - cold and approaching a prop out of a Charlie Chaplin silent movie where he ate the sole of his boot. Perhaps the chef fell asleep at the pass? Such a shame. I hope it improves.

An amazing experience. Had the taster menu and was not disappointed. The food, the wine, the atmosphere and service was just perfect. Hands down the nicest food I've had in North Wales. The wine pairing is a must. FYI if you like enormous portions, and to leave a restaurant feeling physically ill like you've done a man v food challenge, this place is not for you. Personally I felt the portion sizes were perfect, left feeling full but not to the point of feeling uncomfortable. Cannot wait to come again.

Visited The Jackdaw this evening. Slightly hidden away from the high street, it felt private but not especially easy to find. Excellent level of service and a comfortable, warm atmosphere. The servers were lovely & attentive. The velouté in the mussel starter was full of flavour, but gritty mussels let it down - however this was taken off the bill which was appreciated. Wild Red Deer for main was fantastic, very well cooked - it melted like butter in the mouth! I especially enjoyed the side of tarragon carrots, perfectly seasoned. Chocolate Delice for dessert was rich and not too heavy, more pink pepper caramel please! High quality and considered ingredients made for a delicious dinner, will definitely be back for the spring season menu.

We enjoyed a lovely meal on Sunday, the starters of Conwy mussels and smoked salmon were very good, the salmon was very well presented and had wonderful depth of flavour. For mains I enjoyed the sirloin beef it was very tender and full of flavour, the portion was quite larbut I finished it! As it was so lovely. The poached cod was well cooked, soft and tasty, all the vegetable accompaniments were well seasoned and enjoyable. Staff were welcoming and friendly and attentive. What a treat this place was! I had no idea it was a new restaurant, open only 8 weeks, It seem very established in its settings. The design and look of this intimate place is very stylish and sympathetic to its placing in an ancient building on Conwy High Street. The nondescript entrance makes it feel slightly secretive, as if you are on the inside track of the story here. Once up the stairs and into the restaurant you're greeted by the friendly and accommodating staff. The lay out of the restaurant is very simple and allows room for medium sized parties but would be perfect for a date night or small party. The menu is considered and chosen very well, sourcing all local produce where possible, the drinks list is varied and the staff are able to accommodate and guide you with complimentary choices to help you have the best meal possible. The food, is, incredible!! Nick Rudge and his team, use quality ingredients and serve the most brilliant flavour combinations. We had the mussels starter and home baked bread to share, followed by the deer with side vegetables. Every bite was fantastic, and with no pressure from the restaurant to turn tables, we could take our time and savour. I could not recommend this place and its food highly enough. I will without doubt be bringing people back here, and will trying the rest of the menu and maybe one of the locally made gins!

Just had lunch. Lovely friendly staff. Reasonably priced wine. Really tasty duck and chicken liver parfait. Scallops OK. Steak tasty but only just lukewarm as were the vegetables. Coffee (mediocre, Dragon Roastery coffee from Anglesey much better. Coffee just warm) arrived before pudding 🤔. Chocolate delice and cheese board all ok.
