I ordered the Angus beef burger with skin on fries and a diet coke at the bar. The total came to £21.34 and I did not realize until I was back home that they had added a 10% service charge. I would not have objected as much to the service charge if my order had been taken at the table (we waited for 15 minutes but none of the waiters seemed interested in taking our order). The food arrived quickly but was far below the standard I expected. I have ordered similar meals at other hotel bars and the quality has been far better. It was a tired dry thin burger. It would have been a far superior experience to order a quarter pounder at McDonald's. The fries are not fries but chips (about three times the size of standard fries for American readers) and that was disappointing too as I am not a fan of chips. I would not recommend visiting the Waterhouse Bar & Terrace as it is a rip off to charge a service charge when ordering at the bar.

the interior and the overall setting is very nice and an inspiration for a drink or twoAs a guest at the hotel, I have used the bar a couple of times this week. I must admit I am disappointed. The quality of classic cocktails does simply not live up to standards and the bar staff is simply not paying attention. Yesterday I left the bar after I tried to order another drink, today, it took me 10 minutes to order and I literally needed to stand in front of the bartender to get attention. I would expect better - the layout and prices indicate a better service

fantastic bar with a great choice of cocktails! also a nice touch was the background music. The bar staff can put on a good cocktail shaking show too.The lighting is perfect and the waitresses are very clued up on their knowledge of wines.all in all worth a visit or two

I ate from the bar menu we 3 friends down from London a week last Saturday and have to say visually the bar looks great; spacious, cosy and inviting but the food was very disappointing. I had cheese burger and chips which I asked to be cooked as medium yet got well done, this I didn't mind too much but for the cost at £16 it looked very basic on the plate, no salad garnish or coleslaw etc, and tasted dry and uninteresting. My friends said their meals were equally unappetising and I was embarrassed that one on Brighton's iconic hotels could serve such mediocre food. Shame on you Hilton for bringing down such a land mark hotel.

This is a lovely hotel bar with spacious banquettes and regular tables. The atmosphere is very calm and it is a lovely spot to have a night cap. The only down side is the cost - over £8 for a 175ml white wine, although it was of good quality.

I was having a couple of days in Brighton with a friend, who has taken tea in many different venues, it was my first time, but having looked at their delicious and inviting menu, we booked for "tea by the sea" which apparently included - Shoreham crab, coriander and chilli filo parcel,Mini Hailsham lamb burger with tomato salsa,Roast forerib of beef with fresh horesradish cream on white bread, Slipcote cheese, cucumber on granary bread, Wild mushroom, parmesan and truffle oil quiche, and a selection of cakes. We booked with reception for 3.30 the following day. On arrival at 3.30 we had to search out a member of staff, and were shown to a reserved table by a waitress who was confused and giggly, and asked if we would "like our tea now" we'd booked for 3.30, so I would have thought that was obvious? tea arrived, but by 3.50 there was still no sign of the delicious sandwich/ cake selection, and the silly glass teapots meant that the tea was now cold.... managed to flag down a waiter, as the waitress had disappeared, he was very apologetic, and offered us a glass of Prosecco by way of apology, this became a glass of champagne, as the Prosecco was flat. The Afternoon Tea arrived 5 minutes later - well what a disappointment. It was presented on a GRUBBY (smear marks all over it) and OLD (veneer was starting to lift, you could see white edges) melamine pidgeon hole structure... and the sandwiches were 2 x triangles beef and horseradish, and 2 x triangles of cream cheese and cucumber. No other savouries, and hardly the selection in the menu! We assumed we had accidentally been given a cheaper item on the menu, probably due to the dopey waitress that had been our initial contact. The cakes were fresh and delicious and as per the menu, minus one. The waiter came over to ask if all was ok, and we had to say Not really, due to the boring sandwiches, he again apologised, and did offer us more sandwiches, but by this time we had nearly finished, and didn't want more to eat. We were given 10% off our bill at the end, but all in all this was a very disappointing experience, and not what you would expect from the Hilton brand. This would put me off eating in the restaurant, and I would NOT recommend their afternoon tea to anyone. From reading other reviews, I see I am not the only one to have had this experience.

We were walking along Kings Road looking for a bar and surprisingly there were very few. So we stopped here, and were glad we did. Inside was a typical hotel nice bar, quiet, posh, good service and slightly overpriced. We sat outside and stared at the sea. Beautiful! It suddenly started raining heavily with thunder and lightening so we huddled round a heater that had a parasol over it. So even if it is raining the terrace is a really nice place to sit. It's also further away from the pier than some other bars so a bit quieter, which was nice. The terrace isn't huge, but we were there about 3 and there was no problem getting a seat

I stayed at the Metropole during my recent trip to Brighton and decided to grab a bite one evening in the Waterhouse Bar. I ordered the Fish and Chips and thoroughly enjoyed it! Very crispy and fresh, and the service was excellent. Very unexpected, but extremely delighted with the quality of the meal!

Went with crowd from work for Xmas party. Felt like cattle herded into the ballroom come dining room. Food was bland and tto my mind not enough for the price paid. Waiting for taxis to take us home after our night we were rudely told by a bouncer to "[--] off out of the hotel as we were not paying guests". He even forcibly pushed a female colleague who admittedly did not hold her tongue back after bring treated so appallingly. This ape wanted and expected us to stand outside in sub zero temperatures whilst wearing party dresses. We had no choice but to do so and should have complained to the manager more vociferously but we all genuinely felt intimidated Never ever again.

We were staying at the hotel amd visited for evening drinks and lunchtime snacks. The refurb is great, food and drink was fine but the service was terrible. Sharon was downright rude and is clearly in the wrong job. The rest of the staff were more interested in chatting to each other. oh dear - could easily be so much better with some proper supervision.
