We went here for our pre-wedding meal tasting. Not only was the food wonderful, but the service was excellent. Presh in particular stood out, but the entire team made us feel welcome. Highly recommend anyone to come here for a lovely meal out.

We visited for afternoon tea, at £28 per person we expected a little more refinement. Tea choices were good but served in a stainless steel pot (very motorway services) Crockery and cutlery were what I would expect to be used at breakfast, or afternoon tea. Food was nice…..not amazing but nice. Served on a broken three tear cage. Scones were served warm but at same time as sandwiches; which resulted in them being cold and if I am honest a little dry. Perhaps in a napkin envelope, would have kept them warm ? The restaurant was ok, although the seats could have been cleaned after their last use (sorry I brushed all the crumbs onto the floor) Waiter was attentive although not overly discreet, when he announce my allergy to blue cheese to his colleagues in a volume all could hear 🙄 Expected better! And somehow £28 x 2 = £63????

Classic upmarket hotel restaurant with a menu that you would expect, culminating inevitably with a steak and fries. I particularly enjoyed their treacle tart. I didn’t find the venue of great comfort or style , but no significant problem. I wouldn’t come to this hotel just to eat here. But I would at its sister restaurant Le Blaireau.

Cambium is one of three restaurants at the Carey’s Manor Hotel. This is Modern British cooking, with the other two offering French and Thai. All are open to the public, although we were staying at the hotel overnight and had booked a dinner, bed and breakfast rate. The actual restaurant space is utterly devoid of atmosphere. You’d never think of it as other than a hotel dining room. But service is friendly and efficient. There was excellent sourdough bread to nibble on. And, for one of us, a starter of a rabbit, prune and pink fir potato terrine. Rabbit is a very mild meat and it really needed the prunes to perk it up. I have no idea what the potato was doing there.- it certainly wasn’t as a flavour or texture contribution. King prawns were the other starter. They came grilled and, in themselves, were nice enough. And the strips of Piquillo pepper that came with them worked. But the diced peach also on the plate was just a bit odd. Our main course was intended for two. Lamb shoulder had been long braised on the bone and was flavoured with Moroccan spices – cinnamon being quite predominant. It’s served with the accompaniments in their own separate dishes, which was a good idea as you could pick and choose how much of each you put on your plate. There was houmous. And potato wedges. And roasted red onion. And mixed salad. Each element was fine in itself, but it felt like a disparate collection of items which just didn’t really belong together. Lemon tart was a dessert “special” and we both ordered it. Nice pastry with a quite citrussy filling. It was served with a blackcurrant sorbet which tasted fine but had a texture that could best be described as “gritty”.,as it hadn’t been properly sieved to remove seeds, bits of skin, etc, before being frozen. All a bit disappointing, unfortunately.

Wie das Cambium in diese hohe Wertung kam, bleibt für uns Vielreisende schleierhaft. Der Raum ist schlicht und kühl. Die Tische nüchtern ohne eine kleine Blumenvase, Keine Essensets, dafür grobes, massiges Besteck. Die Gläser hatten ihre besten Tage nach dem zweiten Weltkrieg und aus dem Weinglas, das fleckig und unsauber wirkt, will wirklich niemand trinken. Wir auf alle Fälle sicherlich nicht und darum bestellen wir auch keinen Wein. Die Speisekarte liest mal mehrmals und findet kaum ein Gericht, das einem zusagt. Viele möglicherweise originelle und vermeintlich kreative Speisen, die aber wenig überzeugen und vermuten lassen, dass sich der Küchenchef profilieren will, es aber nicht gelingt. Dies im starken Kontrast zum örtlichen Restaurant Albero, wo jede Speise klar ist und überzeugt. Zu erwähnen: der Service im Cambium war sehr zuvorkommend und freundlich. Freude aber bereitete dieser Abend hier nicht.

Booked the restaurant as we were staying in the hotel for one night to enjoy the spa facilities. So hadn’t even had a chance to look before booking just trusted. And so glad we did. So impressed with the restaurant staff ‘s welcome, manner, sense of humour and knowledge of the dishes. Rabbit starter was so simple but stunning, rich in flavour. Superb. Beef cheek main was stunning, decent portion size , tastes on plate balanced and delicious. Loved the mushroom. Of course pudding was fabulous too. Prompt service, lovely staff, spacious , tables not wedged together, comfortable chairs, gentle classy lighting and decor. Great wine. Absolutely loved the meal, such a surprisingly delicious treat. Looking forward to recommending returning ! ( just make the plates a tiny bit warmer for me next time , thank you , sure it’s personal preference)

We ate here one night and although the food was good, the service seemed a little slow with several different waiters. There are two menus which seemed odd. One is vegan but most of these dishes are also on the main menu. Why not have one menu with a key to which are vegan? My main issue is that information given when booking on food allergies did not appear to have been passed on to the kitchen or waiting staff. When I checked there were no nuts in one dish, the waiter seemed surprised to learn I have a nut intolerance, despite it being on the booking form. We needed to ask for the vegan dessert menu as it was not offered.

I had a great time. The waiters were very professional, and the service was great. The ambience was elegant and relaxing. The food tasted fresh and delicious, and the portions were just enough. The drinks were very fresh and refreshing - I had a virgin mojito and it's probably the best one I've ever had.The one thing I'd say is to perhaps be careful about assuming it's the man paying the bill when it's a couple on a date. May be placingthe bill in the middle would be better.

Ate in all three of the hotels restaurants and enjoyed them all immensely the Cambium was however definitely the best for service and food. I personally can recommend the duck to start and the lamb for main. The wine list is very extensive some which are reasonably priced for a quality restaurant. A definite must if staying at the hotel or in the area.

We shared starters of which the duck parpadelle was delicious and mains again well presented, perfect portions and fantastic flavours. Son's 21st and he bought the two of us tea in Cambium. Well, tea with an excellent Flacks Manor beer, as well as the tea. And to start pork pies, scotch eggs, ham sandwiches and venison sausage rolls. Lots of excellent cakes, and two scones each with strawberry jam and cream. Among the best tea's ever and a very special occasion, and for the other dozen or so families celebrating.. Full marks to Carey's Manor and the Cambium for thinking through this themed event, full marks to the service staff, and especially to Antony who served us, polite, friendly and knowledgeable, and is a credit to the establishment. Finally full marks to son for booking it (and paying!).

I had breakfast here during my week’s business trip stay at Carey Manor. They do not open until 7 am, which makes for a rushed breakfast if you need to be at work by eight. The breakfast buffet was good, but nothing out of the ordinary. Service was very good and attentive. There is a selection of typical bacon, sausage, eggs, breads, cheeses, and small selection of fruit.

We dined at the Cambium for my wife's 50th birthday and found the service very disappointing. We were staying in the hotel and had a table booked for 8pm and arrived just before then. We were as,ed if we would like to have a drink before dinner in the lounge. Waited 5 minutes for 2 glasses of bubbles to arrive at a table where chewed olive pips sat on a plate. When the drinks arrived I was asked to sign for them, as the bar and resturant liked to keep bills separate, After 15 minutes I went to the bar to ask to see a menu. The barman offered me a bar menu, but I asked for the resturant menu. Eventually he brought over the set menu. Soon after the Maitre de came over and asked if we were dining in the resturant. We to.d him we had a table for 8 and he effectively told us we were late! I then asked for the main menu so he brought one over for us to share! We decided the best thing to do was to go through to the resturant where I asked for another menu, to be told that I already had one! Then we asked for a wine list. Order taking by the Matre de was very slow.

The food is fine dining, and was very good. It is quite a large dining space and with not many tables occupied when we visited during the off peak season, the atmosphere was a bit soul less and flat. The service was very good, and the sommelier was very attentive and informative, even if the wines were pricey!. Overall good value for money for a nice meal in pleasant surroundings.

Everything was just perfect, starting with the nibbles with pre-dinner drinks, spicy popcorn and olives, I asked for more!. I had the chicken Bonbon with octopus to start, followed by partridge. Hubby had venison and the chicken. We shared a chocolate fondant and cheese and biscuits. The bread was amazing too, generous and so tasty. Everything was executed to a high standard, looked and tasted amazing. Yes it’s expensive but this is high end dining not a Chain restaurant. Service was perfect, compliments to the chefs!

Everyone was very dressed up when we went. It was quiet - the Thai restaurant was much busier. My husband loved his venison which he said was one of the best meals he had ever had. However I would agree with the other reviewer below and one a few pages back and say the artichoke with the undercooked egg yolk is not to be recommended.

We attended Cambium for our 6th wedding anniversary meal whilst staying in the New Forest. From the moment we arrived service was amazing, and the food was out of the world. We were recommended dishes and the staff knew a lot about the dishes which were served to us. There was a wedding going on at the hotel at the time and some guests joined the bar near to the restaurant and became quite loud. This never bothered us at all, yet the staff were really concerned and apologised to us for the noise. Definitely one to try. Thank you Cambium for a lovely time.

We recently visited Brockenhurst and booked a table at Cambium, a fine dining restaurant attached to Careys Manor Hotel. A pleasant welcome and a great Cosmopolitan to start. Then into the dining room - beautifully styled and well spaced tables. We felt at ease and enjoyed the good napery and silver. Service was perfect - not too much attention. Our wine waiter was great - he knew all about our choice and chatted wine enthusiastically. The food was excellent and served professionally. I cannot fault Cambium. It knocks its nearby competitor for six (cricket pitch!).

We recently visited Cambium for an afternoon tea, and were blown away by the whole experience. Firstly, the setting of Carey's Manor is absolutely beautiful. The staff who looked after us were very attentive and friendly as they dealt smoothly with our large group. Last but not least the food was delicious and well presented, with various dietary requirements within the group being met.

Having had less than brilliant service at Armada in Rhinefield where we were staying this couldn't have been a more different service. Met with a smile at the front steps, the lady behind the bar could not have been more helpful and friendly, and then finally our Italian waiter and Italian waitress (nearly 80!!) were spot on and a credit to the establishment. My fiancé and I came for our food tasting as part of our wedding package last week. On arrival we were greeted and sat at a table laid out ready for us. We were offered a drink by a lovely guy called Michael who was very passionate about the wine he had to offer. I don’t know much about wine but I didn’t need to. He talked us through what they were, where they originated etc. We were given warm bread rolls before our starters arrived. The mains followed and then dessert just before coffee and petit fours. We didn’t quite expect the portions to be so big! The food was incredible. Not one dish disappointed which now leaves us with a tricky decision on what to have for our wedding breakfast! Haha Thankyou to the chef who clearly knows what he’s doing!

I should explain 'surprising' in the title. We live nearby, and local restaurants in hotels are often the last you visit - in our case we've lived in this village for 20 years. But, what a wonderful surprise. Very different to our other local favourite, the Montague Arms in Beaulieu, but not surprisingly they're co-owned. In the case of Cambium, a limited menu (we thought) but all becomes clear when you get your food - world class quality, fabulous twists. For example I had crab with a pomegranate granita as a starter - who thought fish and a 'slushie' would go together. Simply devine. Not cheap - we also had a nice bottle of wine, but £70 per head (three/four courses with a nice dip offered as amuse bouche). But, for once at that price, completely worth it and value for money. Nice and spacious and light too...well done. Now firmly on our list of local restaurants. Sorry it took 20 years. (Also stayed the night and had breakfast - a mini-break - and that too was really nice, with great variety of fresh food).

We recently stayed here I had the Roast Lamb dish, this was absolutely delightfull & mealt in the mouth lamb with an aubergine caviar. I enjoyed every single last mouthful of this great main course. My partner had the roast Duck she loved all of this apart from the orange source which was a bit to bitter, the restaraunt was great as they wiped this from the bill. The service is amazaing & unlike most restaraunts the wine was all reasonably priced

We visited on a Thursday evening. On arrival there was no record of our booking, however this got resolved by the friendly staff and we were offered a Pre dinner drink at the comfortable bar area. Our food order was taken and we were invited to sit at our dining table. The service was great and the staff very attentive. The food was delicious - this restaurant is more pricey than many in the area, but I think it’s reflected in the quality of the produce, the service and the fantastic range of wines. We will definitely return!

as part of staying at Carey's Manor Hotel, we experienced the delights of the Cambium on two nights for dinner. The food was excellent, well presented and very tasty. Over the two nights i had a wonderful venison starter, spiced Brill and an excellent duck main course. The staff were very helpful, attentive and polite, ensuring everything was as we expected as well as being able to converse with the diners, which theses days in some restaurants and hotels is not always the case! Will definitely be back.

We were 4 couples who chose this venue because of the 3 rosettes and a named chef. We met in the lounge for pre dinner drinks, which proved hard to order, because, from one member of staff 'I have not got a pen and order pad' and another 'we have been too busy in the restaurant'. When we got into the restaurant we were sat at a long table, so couples at each end could not talk to those at the other end. When the food arrived it was barely visible on the plate. Small portions is an understatement. I called the head waiter over and said 'this sample looks ok, can you now bring me a portion' My fellow diners also had miniscule portions, but did not like to make a fuss. Altogether a disappointing experience. As we were staying at the venue we had planned to eat at the in house French restaurant the following evening. Based on the Cambium experience, we chose to eat at another venue in Brockenhurst. I have asked the AA to review the 3 rosettes.

Dining with a friend we actually had giggles at how bad this was, although the serving staff were at pains to compensate us, it was not a good experience. We booked a table for 7.30pm and were finally presented with our first course at 8.20pm by which time I was past hungry A further 30 minutes wait for our very small main. We were offered a complimentary dessert but didn't have the heart to wait any longer. I am dairy intolerant and found it difficult to get advice on what would suit me and although my friend was offered gluten free bread, it felt as if things weren't geared to suit people who needed to avoid different foods. Generally the atmosphere was lacking. There were very few people in the restaurant - we counted 8- but I understand a large party in private dining was why there was such a delay. Obviously caught them on a bad day but I would have expected a hotel of this size to cope better.The food we did have was small in portion size but very tasty. That is the only reason I have given an average rather than poor rating.

Although the reviews for Cambium looked pretty good, we were not expecting to be as impressed as we were. We were staying in the hotel so it was a natural option to eat there. We chose the tasting menu with wine pairing as it looked interesting and its always nice to be surprised by some unexpected wine options. Thankfully we were not let down and in fact the reality was so much better than we were expecting. For a reasonable price we enjoyed some great plates of food but the highlight was some very well considered wine selections by a sommelier who new his trade and had put some genuine thought in to the pairings. He spent time with us to explain the reasons for his selections which made a good meal interesting. The whole experience was a very pleasant surprise and something i would definitely do again

We ate here twice as the first time was so good. The service is tip-top and first class whilst the food is so flavoursome. We had the crab starter which was amazing and the beef main is to die for. Lemon meringue for dessert was so tangy; also the sorbet flavours were the best I have ever tried, Highly recommended.

We came here for our anniversary meal and I could not be disappointed. All the staff were absolutely wonderful and couldn't be praised enough. The food though, was just a delight. Starting off with the Rabbit starter, it was then on to the Steak & Raviolo. Even though it wasn't the best blue steak I've every had it was still extremely good. The taste and the juice of it was just a delight on the pallets. Finished off with a Beetroot sorbet...which some how worked. It was like it was cross between a moose and a sorbet.The only to be aware of, is how easy it is to make this meal very expensive. It's was well worth it though, and that is all that matters!

We were bought an anniversary dinner, never been before. It was totally AMAZING!! Hubby is not big on fine dining but this was beautiful and the flavours were like fireworks on the palate! The whole fine dining experience was definitely one to be repeated, we found we were able to enjoy what we had eaten rather that leaving so full you don't appreciate the food! The wine chosen for the meal complimented the food perfectly and as vegetarians, we were amazed by the choice and the flavours of our choices. The staff were friendly, attentive and added to the ambience of the evening especially the restaurant manager as well as Richard the wine connoisseur and Anna our table host, all of whom went above and beyond to enhance the whole experience. Would highly recommend Cambium restaurant especially if you want a venue with the wow factor, well worth it and we will most definitely be visiting again soon.

The service from the staff today was outstanding. Myself and my wife had a main and dessert. In particular my main course which was duck which was cooked medium rare was unbelievably good. I was looked after with drinks by a great member of staff and spoilt with the cheese board dessert. I would definatly recommend to friends and family

We had a superb evening in Cambium. We had the tasting menu which was beautifully presented, using interesting combinations that worked, it was thoroughly enjoyable. Our sommelier was great chatting through the wines and very knowledgeable on his subject. All of the staff were supremely professional and made us feel both very special and relaxed. The interior was nicely designed, very contemporary but in keeping with the old lodge feel. It was just the right combination of great food, extensive wine list but with plenty of affordable options and really pleasant professional service. We will be going back as soon as we can! This was dinner to celebrate my birthday, and it was with some trepidation and apprehension that I headed to Carey's Manor in Brockenhurst yesterday evening for dinner with my wife at Cambium. The website provides extensive information around the menu, wine list, no children under eight, and a gallery with photos of food, surroundings etc., and all this made me wonder if this would be a case of over promise versus under delivery. This was clearly going to be an expensive meal but would it be value-for-money?As I'd walked from the car park to the hotel entrance I passed a number of people in "wedding guest" attire, so it was clear that there was a wedding party at the hotel, and I hoped that this wouldn't intrude on or degrade our dining experience. Seated in Cambium's bar area with a glass of prosecco perusing menus and wine list, a couple of wedding guests wandered in but were promptly directed to the function area of the hotel. Carey's Manor is a popular wedding venue, but at no time other than this were we aware of the ongoing wedding reception/ soiree. Having made our food and wine choices we were shown to our table. We really liked that we were given a table for two that could comfortably have seated four. Being seated side-by-side felt much more intimate than sitting opposite each other. Service was excellent throughout, attentive without being intrusive. Delicious fresh bread with accompanying dips preceded our starter, bread and dips were left on the table until our main course was cleared. I particularly appreciated the bread, as we'd had a busy day at home in the garden and hadn't eaten. The presentation of the food and portion sizes is as one would expect for a "fine dining" experience, so bread and dips provided extra, welcome sustenance.My main course was pork (belly and cheek) whereas my wife had the monkfish. These were excellent albeit the opportunity to order a side plate of "greens" or salad would have been appreciated, though this statement is not intended to detract from the quality of presentation and the taste of the food itself. The food was beautifully cooked and clearly presented with so much care.Service was also unrushed. There was an interval between courses which was just right - allowing time for conversation and reflection on surroundings, wine and food. Staff engaged very well with us - Michael clearly knows his wines and we are looking forward to returning and experiencing the tasting menu with wine selections. The Pouilly-Fumé we chose went very well with both pork and monkfish, and was delicious. My wife chose a glass of Austrian Pinot Noir to go with her baklava dessert - this combination was recommended on the menu. Although costing £19.50, this was a stunning and unusual slightly sweet, dessert-style wine with an intense flavour. Michael clearly appreciated our appreciation of this wine and it was apparent that the reason it's so expensive is that it is very rare.With an Espresso Martini for my wife and an Espresso non-Martini for me, the bill came to just over £200. Refreshingly for a "fine dining" establishment this didn't include service. I didn't begrudge adding on slightly more than 10% for service as the experience was so consistently positive. For me, this was reasonable value-for-money - we could have passed on the dessert wine and the Espresso Martini was probably unnecessary but so what. We are both really looking forward to returning and sampling the tasting menu, with wine selections.

I just left a review for the hotel and thought I'd add one for the Cambium. The staff were excellent and as a vegetarian I found an unusually wide variety of options which was great. My wife said her main meat course was very good.I wouldn't say the food was exceptional, although some courses were very good indeed.Our room came with a free bottle and the staff were happy to let us have that at the table rather than buy another - which frankly surprised me. 5 stars won for that touch!
